Meet the Squash family!!!


Last night at our church's monthly Ladies Fellowship, we shared many delicious dishes together. Our theme for this month was "Pumpkins and Squash" and the ladies showed up with a HUGE variety of meals, appetizers, desserts and drinks that were either pumpkin or squash related. We had a fantastic time!!


This is some information I shared about the winter and summer squashes. I love the way that the Lord created so many bright looking, good tasting vegetables that are so good for us, too!!!

History of Squash
Modern day squash developed from the wild squash that originated in an area between Guatemala and Mexico. Christopher Columbus brought squash back to Europe from the New World, and like other Native American foods, their cultivation was introduced throughout the world by Portuguese and Spanish explorers. Today, the largest commercial producers of squash include China, Japan, Romania, Turkey, Italy, Egypt, and Argentina.

Winter Squash
Winter squash is an excellent source of vitamin A. It is also a very good source of vitamin C, potassium, dietary fiber, and manganese. In addition, winter squash is a good source of folate, omega-3 fatty acids, thiamin, copper, vitamin B5, vitamin B6, niacin and copper.


Varieties of winter squash include:
Butternut squash: Shaped like a large pear, this squash has cream-colored skin, deep orange-colored flesh and a sweet flavor.
Acorn squash: With harvest green skin speckled with orange patches and pale yellow-orange flesh, this squash has a unique flavor that is a combination of sweet, nutty and peppery.
Hubbard squash: A larger-sized squash that can be dark green, grey-blue or orange-red in color, the Hubbard's flavor is less sweet than many other varieties.
Turban squash: Green in color and either speckled or striped, this winter squash has an orange-yellow flesh whose taste is reminiscent of hazelnuts.
Pumpkins: The pumpkin with the most flesh and sweetest taste is the small sized one known as sugar or pie pumpkin, the latter referring to its most notable culinary usage.


This group also includes acorn squash (available all year-round), butternut squash, buttercup squash, green and blue hubbard squash, green and gold delicious squash, and banana squash. Winter squash is most plentiful from early fall until late winter

Summer Squash
Summer squash is an excellent source of manganese and vitamin C. It is also a very good source of magnesium, vitamin A, dietary fiber, potassium, copper, folate, and phosphorous. In addition, summer squash is a good source of omega-3 fatty acids, vitamin B1, vitamin B2, vitamin B6, calcium, zinc, niacin, and protein.


Varieties of summer squash include:
Zucchini: Probably the best known of the summer squashes, zucchini is a type of narrow squash that resembles a cucumber in size and shape. It has smooth, thin skin that is either green or yellow in color and can be striped or speckled. Its tender flesh is creamy white in color and features numerous seeds. Its edible flowers are often used in French and Italian cooking.
Crookneck and Straightneck Squash: Both of these summer squashes have creamy white flesh and generally have yellow skins, although sometimes you can find them with green skin. Crookneck squash is partially straight with a swan-like neck. It was genetically modified to produce its Straightneck cousin that is shaped as its name implies.
Pattypan Squash: This small saucer-shaped squash features skin that can either be pale green or golden yellow in color. Its cream-colored flesh is more dense and slightly sweeter than the zucchini.


They also include the yellow crookneck, the large Straightneck, the greenish-white patty pan (petit pan), and the slender green zucchini. The EPA would also include crookneck squash, scallop squash, spaghetti squash, Chinese okra, bitter melon, balsam pear, balsam apple, Chinese cucumber, and chayote. Some of these squash are available at all times of the year.


Pasta with Pumpkin and Sausage


This is the recipe that I shared with the ladies at our monthly Ladies Fellowship at church. Originally it is a Rachael Ray recipe, but I made some changes for our family.
Enjoy!!!
Pasta with Pumpkin and Sausage
Modified version of a Rachael Ray recipe

1 tablespoon extra-virgin olive oil, plus 1 tablespoon
1 pound bulk sweet Italian sausage
4 cloves garlic, cracked and chopped
1 medium onion, finely chopped
1 bay leaf, fresh or dried
4 to 6 sprigs sage leaves, cut into chiffonade, about 2 tablespoons
2 cups chicken stock, canned or paper container
1 cup canned pumpkin
1/2 cup (3 turns around the pan) half and half
1/8 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg, ground or freshly grated
Coarse salt and black pepper
1 pound penne rigate, cooked to al dente
Romano or Parmigiano, for grating

Heat a large, deep nonstick skillet over medium high heat. Add 1 tablespoon of olive oil to the pan and brown the sausage in it. Transfer sausage to paper towel lined plate. Drain fat from skillet and return pan to the stove. Add the remaining tablespoon oil, and then the garlic and onion. Sauté 3 to 5 minutes until the onions are tender.
Add bay leaf, sage, and wine to the pan. Reduce wine by half, about 2 minutes. Add stock and pumpkin and stir to combine, stirring sauce until it comes to a bubble. Return sausage to pan, reduce heat, and stir in cream. Season the sauce with the cinnamon and nutmeg, and salt and pepper, to taste. Simmer mixture 5 to 10 minutes to thicken sauce.

Return drained pasta to the pot you cooked it in. Remove the bay leaf from sauce and pour the sausage pumpkin sauce over pasta. Combine sauce and pasta and toss over low heat for 1 minute. Garnish the pasta with lots of shaved cheese and sage leaves.

Eggplant Stew


After my post about what to do with an eggplant, I really got busy searching recipes using eggplant. When I'm trying a new recipe with a new ingredient (like eggplant), I have to really be picky about how I introduce it to Mr. U. If you ask him if he likes eggplant, he'll tell you "no". However, I know that with the right ingredients, he would LOVE it!! So...after much searching, I found this recipe. Well, this is not the original recipe that I found... I had to tweak it a bit to make it "mine" and I'll bet that most of y'all do the same thing, too. Here is Eggplant Stew...


Eggplant Stew

8 servings

1 tablespoon extra virgin olive oil
1 medium onion, chopped
1 pound ground beef
2 cloves garlic, minced
1 pound eggplant, diced
3/4 cup finely diced carrots
3/4 cup sliced celery
2 (14.5 ounce) cans diced tomatoes, undrained
1 tsp. Italian seasoning
3 bouillon cubes with 3 ½ cups water OR 2 (14 ounce) cans beef broth
1 teaspoon sugar
1/2 teaspoon ground nutmeg
1 teaspoon salt
1/2 teaspoon ground black pepper
1/2 cup dry macaroni
1/2 cup grated Parmesan cheese

1. Heat the oil in a skillet over medium heat, and cook the onion, beef, and garlic until beef is evenly brown. Drain grease, and mix in eggplant, carrots, celery, and tomatoes and Italian seasoning. Pour in beef broth. Mix in sugar, and season with nutmeg, salt, and pepper. Bring to a boil, then cover and simmer for about 30 minutes.
2. Stir dry macaroni into the stew, and continue cooking 15 minutes, or until the macaroni is al dente. Top with Parmesan cheese to serve.

As it turns out, Mr. U LOVES this recipe! He took one bite and pronounced it a keeper!! Woohooo!!!

Setting Captives Free


Setting Captives Free is a website that has free Bible studies. They have several studies that deal with sexual addictions, substance additions and gambling addictions, but the one that got my attention first was one about food addictions. Oh my!! I'm not gonna tell you much about that study except that The Lord's Table does an excellent job in discussing what the true problem with food is- your heart.

The study I just started is a one called Glorifying God--A Practical Handbook. Wow. Just read this quote from Day 1...

"The kind of love that pleases God is the love that delights in God, that finds great pleasure in Him, that prefers Him over everyone and everything else. A man’s heart is set upon whatever he treasures, and to love God truly is to treasure Him supremely. True love for God is exuberant love, love that is more like a stream than a few drops of water. It is a superlative love, a super-abounding love, an overflowing love, a never-ending love."

Is THAT the kind of love that you have for the Lord? Be honest with yourself. Do I delight in God? Do I find great pleasure in Him? Do I prefer Him over everyone and everything else? Oh how I LONG for my answer to be "Yes!!!" to those questions.

Needless to say, I am enjoying this study. I long to know Him more and become more like Him and less like me.

Some new things for baby...

Okay, so I know that Elizabeth won't be here for a few more months, but I am getting ready for her slowly but surely. Mr. U bought me this diaper bag last week. The brand is called a Kecci Shanghai II and the color is chartreuse. I love it because it's not a typical looking diaper bag and it has that Asian flair to it that reminds me of Elizabeth coming from China.



Friday, Mr. U and I went to a children's consignment sale and they had a TON of things to buy and some really great deals!!! Since I don't know what size Elizabeth will be when she comes home, I have NO idea what size to buy her. But... I saw these three little dresses and thought they were FAR too cute not to purchase. I also bought some children's books for her. I love looking at children's things.

With all this talk about apples and apple butter...

Okay, I've read SOOO many blogs about people making apple butter lately. I LOVE LOVE LOVE apple butter and decided I wanted to give it a shot myself. I headed to the grocery store to buy some apples only to discover that they were VERY expensive- at least here in my part of "the South". Isn't this the time of year that apples are supposed to be coming in and they are on sale? Well, I couldn't find any on sale... So... what's a girl to do??

I found a recipe that uses unsweetened applesauce!!! I made this Friday and it made the whole house smell so scrumptious!! Very easy and INCREDIBLY tasty. I highly recommend this to everyone who can't find fresh apples on sale!!


Crock Pot Apple Butter

4 qts unsweetened applesauce
7 cups sugar
1 1/3 cup brown sugar
5 1/3 tbsp cider vinegar
5 1/3 tbsp lemon juice
2 tsp cinnamon
2 tsp allspice
1 tsp ground cloves

Combine all ingredients in crockpot. Cover and cook on High about 3 hours, stirring occasionally. Remove lid and continue cooking until excess liquid cooks away, on Low for about 5-8 hours. Seal mixture in hot jars and process about 10 minutes in a hot water bath. Makes about 9 pints.

Problems with Blogger

Well, as you've noticed, my site isn't so "pretty" anymore. I had problems with Blogger earlier today and finally just got a few things resolved. The only thing I can figure is that I deleted some of the coding on the template on accident. How? No one knows. But, it happened nonetheless. And so.... we move on.....

My apologies to anyone who was as confused by my blog issues as I was. Hopefully all will be well soon. :)

Making your house a dream home???


(Note- This is not my house.  This is a dream home!!!!)

How often do you sit around and dream about your "dream home"? After reading these posts (here and here) about dream homes, I'm starting to think a little differently.

I'm very guilty of whiling away the day being caught up in daydreams about the perfect home of my imaginings. Why? What's the point?

Girl Talk says... " As a Christian woman, my 'dream house' shouldn’t be one of mere aesthetic beauty, or luxurious comfort. Rather, I should aspire to have a home like the one Peter Marshall once described as possessing 'an atmosphere in which it was impossible to keep from thinking of God.' "

Oh, just go and read for yourself. Then, please, come back and share your thoughts about this with me. While we SHOULD make a house a home- a place where our family wants to be- we don't need to get caught up in trying to make our house a worldy "dream home".

What's up today...


Can you tell what I'm doing today by the picture I've posted? Yup, it's FLOWER TIME!! I know, these aren't a ton of flowers. I'm just getting started. HA! Mr. U would have a heart attack if I bought all the flowers I wanted at one time. So I'll just spread it out over a month or so and today's project is planting more daffodil bulbs and some pansies. Goodness gracious, I love flowers.

Mr. U asked me one day if I thought someone could ever plant too many flowers (was he hinting at something??). I just looked at him like he had two heads. Too many flowers? How DARE he!!!!

Yesterday at Lowe's when I was picking out these flowers, Mr. U said "So, I guess you want me to plant these, huh?" I replied, "You planting these flowers for me is like you buying an Xbox game and I play it for you." Seeing as how I've never played an Xbox game in my life and have NO desire to, he smiled and said "Oh, I get it."

Potato Leek Soup


I made the best and easiest Potato Leek Soup today!! I bought some leeks at the grocery store on Monday because I wanted to make this soup. But when I searched All Recipes yesterday, all the recipes I found were very fattening. So, I came up with this very tasty version on my own.

Leeks supply plenty of potassium, some folic acid, beta-carotene (in the green stems) and vitamin C. Although less beneficial than onions, leeks may help to reduce cholesterol levels and may offer some protection against cancer. Leeks also assist the body in the disposing of uric acid and so are beneficial to those who suffer from arithitis.

So, eat and enjoy!!!


Potato Leek Soup

3 medium leek(s)
4 medium potato(es)
2 Tbsp unsalted butter
2 Tbsp cornstarch
1 1/2 cup fat-free half and half
4 cup fat-free chicken broth
salt and pepper to taste

Peel and dice potatoes into bite-sized pieces. Cut dark green tops off of leeks, thinly slice leeks, place in a collander, rinse and drain. Add butter to dutch oven that is over med-high heat. When butter is melted, add leeks and saute until tender. Add potatoes and broth (reserve about 1/4 cup of broth for later). Cover, bring to a boil, then reduce heat and simmer for about 30 minutes, until potatoes are fork tender. In a separate bowl, add cornstarch and remaining 1/4 cup of broth. Stir together until incorpated and there are no lumps. Stir half and half into soup and then add the cornstarch mixture. Let it thicken (about 1 minute) and then taste and add salt and pepper as needed.

6 servings.

Do any of y'all happen to know what THIS is? Is it a flower? A weed? Is it poisonous??

This popped up in our flower bed late last week. The bud, before it opened, resembled a tulip bud, but then it turned into this. Very interesting looking, I should say.

If you have any idea of what it is, please let me know. If it's poisonous, I need to remove it. But, if it is just a flower, then it can stay and be the talk of the family!!!

September 19, 1989

What's with the date? Well, on September 19, 1989, the Lord in His goodness and kindness saved me from eternal separation from Him!! Praise the Lord!!!

I was in college and was miserable. It was the beginning of my sophomore year and before I had returned to college, my dad had asked me if I was 100% positive that I would go to Heaven when I died. "Of course I'm positive" I growled back at him. I had no idea why he was asking me that. I only knew that I wanted him to stop talking about "religious stuff" with me.

I grew up in a wonderful Christian family. I am blessed to say that both of my parents are born again followers of the Lord Jesus Christ. We were at church every time the doors were open. I was a "good" girl. But when I got to college, I wasn't so "good" after all. My freshman year, I knew I was living a very sinful life. I knew that not only was I disobeying my parents but also that I didn't really care if I was disobeying the Lord. I figured He was too busy to pay attention to little ol' me.

Shortly after my dad asked me about going to Heaven, I returned to college. I remember being invited to some "Welcome Back" parties and I went to one. Everyone was drinking and, for some reason, I had no desire to drink. My friends were confused. I was confused. I LOVED a good party... but not tonight.

The next day, classes started. For some strange reason, some people in my dorm had invited me to two different "Welcome Back" parties for two different Christian organizations. The first one was the BSU (Baptist Student Union). I remember sitting in the meeting and someone stood up and sang "Thank You" by Ray Boltz. It starts off "I dreamed I went to Heaven...". What??? I thought. Oh my!! My dad was RIGHT!! I am NOT 100% positive I'll go to Heaven. It's nothing but a dream to me!!!!!

I tried to put these thoughts out of my mind and went to the next "Welcome Back" party with Campus Outreach. The man stood up to talk and talked about the only verse that I knew even though I had been in church my entire life. He talked about John 3:16. He said "Put your name in the blank. For God so loved _______ that He gave His only begotten Son..." I heard nothing more after that. God loved ME? Sure, I knew God loved "the world", but ME? This was so new to me. I could barely think!!!

The man asked people to pray a prayer with him and I just sat and watched. I meandered back to my dorm room, desperate to escape all the confusing thoughts swirling around inside my head. I got in bed, pulled up the covers and just cried. God, in His mercy, had been showing me my need of Him. He showed me my sin. He showed me that I was nothing apart from Him and my goodness was nothing but filthy rags to Him. In my tears, I prayed "Dear Lord. I don't know what I'm supposed to say, but I need You. I don't know what I'm supposed to do, I just know that I am a sinner and I would like to ask You to forgive me. Oh, and if it's not too much trouble, would You mind sending me a Christian friend that I can talk to about this?" And that was it.

The next day, I awoke and thought "Well, I think I'm supposed to read my Bible". I opened it up (I have NO idea why I had my Bible in college - that was God!!!) and started reading and IT MADE SENSE!! The blinders had been removed and His Spirit began teaching me the ways of God through His Word.

I left for my morning classes and returned to my dormroom shortly before lunch. A girl that lived in the dorm next to mine was returning from classes, too. I didn't like her the year before because she was a Christian. You know what happened? She asked me if I wanted to go to lunch!! Whoa!! That was a quick answer to prayer- a Christian friend!!!

That began my walk with the Lord. I am not perfect by ANY stretch of the imagination. BUT, I know the One who is perfect. Daily He is showing me the areas of my life that are not pleasing to Him. I am so incredibly grateful that He chose to save me. I am blessed to be called a Child of God.

Lord, You are so good to me. Your ways are higher than mine and Your thoughts are higher than my thoughts.

Praise the Lord.

What to do with an eggplant??





A sweet lady has given us an eggplant. I've had eggplant parmesan before but I've never eaten it any other way. Would y'all mind sharing your favorite eggplant recipes?? I would DEFINITELY appreciate it!!!

How to Clean Practically Anything...


We have the best book!! It's called How to Clean Practically Anything and it's by Consumer Reports .

Last night, Mr. U added ink to our printer. It's a messy job, but he is always so careful and never gets even a drop anywhere. Until last night. Two pretty large drops of BLACK ink made their way to our beige carpet. We didn't discover it until this morning. Not a pretty sight, let met tell you.

When I discovered the ink spots this morning, I sighed and figured they were there for life. Smartly, Mr. U grabbed How to Clean Practically Anything and looked up "ink" and it said to use rubbing alcohol. The description was for ball point pen ink but it worked magcially on our carpet!!! He poured some right on the spot and started rubbing. He didn't have to rub hard, either. It came right off!!!! What a blessing!!!!

I wish I had taken "before" and "after" pictures of the spot, but, frankly, I figured his trying to clean it was pointless. HAHA!! Guess I was wrong! If you were to see the area now, you would never know that black printer ink had just been rubbed out of the carpet.

Just wanted to share with y'all in case you ever run into the same problem.

Pumpkin Cobbler...

I LOVE pumpkins!!! Not only are they cute and round and sporting a FABULOUS color, but they are darn tasty, too!!

Today I received a catalog from Gooseberry Patch. Sure, they sell some really great products, but I found a delicious RECIPE in the catalog, too!!! I haven't made it yet, but I will. I just HAD to share it with y'all before I forgot about it.

If you try it, let me know how it comes out. Hooray for pumpkins!!!

Pumpkin Cobbler
3 eggs, beaten
15 oz can pumpkin
12 oz can evaporated milk
1 cup sugar
1/8 t salt
1 ½ t cinnamon
1 t ground ginger
1 T vanilla extract
18 ¼ oz pkg. yellow cake mix
1 ¼ cup margarine, melted
1 cup chopped nuts

Mix the first 8 ingredients and pour into an ungreased 9x13 pan. Sprinkle cake mix over the top and drizzle with melted margarine. Bake at 350 degrees for 25 minutes and then top with nuts. Bake for an additional 15 minutes. Makes 15 to 18 servings (or less if you are serving people that LOVE pumpkin and LOVE desserts!! LOL!!!).

One busy day...

Mr. U and I have had a VERY busy and tiring day today. Family Life Today hosts an adoption conference called If You Were Mine. Today they held one at a church near us and our adoption agency (Chinese Children Adoption International-CCAI) asked if we would mind putting up a booth at the conference and talking with prospective adoptive families about the agency. We had the BEST time talking with couples about CCAI and adopting from China. We LOVE talking about adoption!!! The time flew by and before we knew it we were packing up to come home. While we did have a blast, it is amazing how tiring it is just standing there talking with people!! LOL!! We both pray that many families will want to adopt, whether from China or somewhere else. What a blessing it is to serve the Lord by helping others know how they can make the difference in the life of a child through adoption.

My garden...



Fall is just around the corner. And today that corner seems awfully close!!!


I was pulling weeds in the garden earlier and noticed all my flowers are either dying or going to sleep for the winter. My big beautiful hydrangeas on either side of the front porch aren't lavender and cheery anymore. The petunias that grow with such passion are left leggy and in need of a visit to the trash pile. The lovely black-eyed susans have all lost their sunshine yellow petals. Sigh. As much as I love fall, I hate to see the happy flowers of summer go.

While pulling weeds, I realized that I don't have to be sad about my flowers. I can have a fall garden!! I've never actually planted any flowers in the beds for fall and the only flowers I know about for fall planting are mums!! I know there have to be many more flowers that I could plant for fall and I was wondering if any of y'all could help me out? What are some fall flowers that I could plant this year? Annuals, perennials, biennials, doens't matter. I just LOVE color in my flowers beds!!!

Where were you on September 11, 2001?





It was our first full year homeschooling. We had pulled the children out of a private Christian school in January, so this was the start of our first official full year of homeschooling and we were all very excited. Joshua was sitting on the sofa working on a subject and Danielle and I had just started working on Geometry. Mr. U was checking email. Breakfast was finished, dishes were done and the day was getting off to a good start.

While Mr. U was sitting at the computer I heard him say, “What in the world?” and he immediately turned on the TV. A plane had flown into one of the Twin Towers. “How horrible!!!” we all agreed as we gathered around the TV to watch. What happened? Perhaps something was wrong with the pilot? Was the plane having problems? What caused it to happen? As we were sitting there wondering all these things, it happened. The second plane flew into the other tower.

Two planes? Tears streamed down our faces. There’s no way that’s an accident. That’s planned. But by who? And WHY???

We sat spellbound in front of the TV all day long. The phone rang off the hook- some family calling to check on us and we were making sure they were alright as well. Mostly we had senior adult ladies in our church call. The sweet widows who had no one else to talk to. They wanted to understand what was happening. Were they going to be okay? Were we at war? They figured the pastor could help them understand.

At one point during the day, Mr. U had to go to town to get something from one of the stores. Joshua went with him and I remember thinking “PLEASE DON’T LEAVE ME!!!” I was scared to death. I was scared of war. I felt helpless, alone.

That night we had a special prayer service. Normally, since it was a Tuesday and not a typical “church” day, you would think there wouldn’t be many people at church, but there were MANY there!! People feeling unsafe. Wanting answers. Needing reassurance that God was STILL in charge. Desperate to be with fellow believers and lift their voices, together, to the only One who could fix the situation.

While crawling in bed late that night, I wept as I prayed. “I shouldn’t go to sleep”, I thought. “If I go to sleep, something may happen and I won’t be able to react quickly enough.” Silly thought considering we are in Georgia and the World Trace Center is thousands of miles away from me.

But the whole experience felt as if it was in my own backyard. As if I had personally been attacked. This is MY country. These are MY people. Land of the FREE, remember? Home of the BRAVE. I wasn’t feeling very free OR brave at that moment nor for days afterward.

Five years later, here I sit. Life is back to normal. For our family, anyway. We didn’t know anyone personally who died in any of the attacks. We hurt for those who did, though.

For the thousands of families that are missing someone so very badly, we will never forget. Your loved one WILL be remembered. While your sorrow is much deeper than mine, I still cry for your family. I imagine all the times you’ve thought of that day and replayed it over and over in your head. All the “what ifs”.

Regardless of what happened that day, God is still in charge. He IS good and He DOES good. Always. He had reasons for that day. Reasons we may never understand this side of Heaven. But, truth is, He knows best. So follow Him. Follow Him hard. Life is shorter than we realize.

When I originally wrote this post, I had just discovered Everyday Mommy's blog. There were some really good articles there, but the one that really caught my attention was the first one written entitled To Moms of Little Girls. In it, she shared what we've already seen- the clothing for young girls is not "little girl" at all!!! Where has modesty gone? Where has CHILDHOOD gone??

In this post, she was calling us to let our voices be heard!! We, as mommies, will NOT buy the horribly immodest, tramplike wear they try to sell to mothers of young girls. Not me, nu-uh, no way, Jose!!!!

Here, just read the mission statement...

Moms for Modesty Mission Statement:
-As a Mom for Modesty I believe in common-sense modesty for girls and young women.
-I believe in refraining from sexualizing our girls and young women.
-I believe that it is unwise and unfair to taunt boys and young men by permitting my daughter(s) to dress in an immodest manner.
-I believe that true beauty comes from within and I strive to teach my daughter(s) this truth.
-I will loyally shop at retailers that provide girls' and young womens clothing that is modest, affordable and stylish.

Let retailers know that you want your little girl to actually LOOK like a little girl. Let them know you stand for modesty. Let them know that you stand by what you say. And, most of all, let your daughters know that you love them by protecting them from what retailers are trying to make our daughters into- the image of a depraved, fallen world.

Your daughter is worth it.

Diet Coke!!! I know, I know… this stuff is SOOOOO bad for you (believe me, I’ve read all the articles about it) but I just LOVE it!! So… I'm just opening a fresh can.

Slightly overcast and mid 80s. I wish it was a clear, sunshiny day and there was a crisp breeze in the air and I could hear the freshly fallen leaves rustle as the wind blew. (Yes, I’m ready for fall!! LOL!!!)

Call me a glutton for punishment...

Most of y'all will remember my issues with taking YEARS (literally) to finish my son's crocheted afghan. Well, I have promised myself to never let that happen again. So, to prove it to myself (haha!!), I have started another afghan. This time it's for Elizabeth. Hopefully, by the time she gets here (I am praying we can have her here around Christmastime!!!!), I will be finished. But, with my track record... who knows???




The first pretty picture is a photo of the actual picture in a crochet book called Afghans For All Seasons (can you see my finger in the top left of the photo??). This is the afghan that I am making for Elizabeth except I am using Lion Brand Bubble Gum Pink and White. You know, fun, girly colors.




This photo is of the colors- Bubble Gum Pink and White. They look MUCH prettier in real life. Oh well. So far I have made the first two pink rows and the first two white rows. I just need to make 7 more pink rows and 6 more white rows and then I can start doing a weave in the crochet to make it look like a thick woven blanket!!

I just gotta brag!


Yes, I know that all babies are cute, but SOME babies are more cute than others!! Like this little one, for example.

This is my new little niece, Sarah. Is she beautiful or WHAT???? She is a little over 5 months old right now. I got to spend Saturday morning with her and I am just amazed at how she can be so gorgeous AND so sweet at the same time!!

She's a little bald right now (I LOVE LOVE LOVE bald babies!!!!) and hopefully her hair will come in red like my brother's (Sarah's dad) and sister's hair!!! I just love little redheads!! Congratulations my dear brother and sister-in-law!! I hope y'all have many, many more babies!!!!

Gosh, it's fun being an aunt!!!!! (I'm sure my sister would second that!!!)

Apple recipes, please!!!!



In a few weeks, we are having a ladies fellowship at church. We are going to have a fellowship once a month and each month there will be a different "theme". The theme for the September fellowship is apples. I LOVE apples, but we are all supposed to bring an apple related recipe. It doesn't have to have just apples in it, but an apple product needs to be in the recipe- apple cider vinegar, apple sauce, apple butter, you get the picture. All I can think of to take are apple desserts or apple salads. Do y'all happen to have a favorite, tried-and-true recipe that you serve your family as a main dish that has apples or an apple product in it? If you do, would you mind sharing? I would GREATLY appreciate it!!! You will be the "apple" of my eye!! HAHAHAA!! ... ahem... seriously, though, folks, I would be so thankful for any help.

Chicken and Ham "Pot Pie"

Mr. U and I LOVE this recipe!! It's too good not to share. It's got the "Pot Pie" in quotes because you don't actually make a crust for it- you simply serve it over store bought refrigerated biscuits!! Quick. Easy. Warm. Delicious. Definitely a keeper in our home.















Chicken and Ham "Pot Pie"
1 (7 1/2 ounce) package refrigerated buttermilk biscuits
1 Tablespoon butter
1 boneless, skinless chicken breast
1/2 pound boneless ham steak, cut into but sized pieces
1 (16 ounce) package of frozen veggies (we use Asparagus Stir-fry blend)
1 onion, chopped
4 garlic cloves (actually, we use about 6 BIG cloves!!!)
1 1/2 cups reduced sodium chicken broth
1 teaspoon dried thyme
1 teaspoon ground black pepper
2 Tablespoons cornstarch
3/4 cup skim milk

Prepared biscuits according to package directions.

Melt butter in a large skillet over medium high heat. Add chicken and ham and cook until chicken is cooked. Add frozen veggies, onion and garlic. Cook until veggies are thawed and stir in chicken broth, thyme and black pepper. Cook until heated through.

Dissolve cornstarch in milk and stir into skillet. Bring to a boil and cook until thickened, about 1 minute. Put the hot biscuits in individual bowls and top with this yummy filling and serve.

This is supposed to serve 8 people, but often, well, the three of us make it into two meals.

NOTE: I like to add extra veggies to our meal. I always keep frozen green beans in the freezer, so I will add a handful or two of those. Plus, I have a large bag of diced summer squash (yes, the yellow stuff) and I'll put a handful or two of that in as well. Mr. U actually LOVES the veggies in this!! Hip hip hooray!!!!!

Also, you can definitely make your own homemade biscuits instead of using the store-bought ones.

Food for church...


Our church hosted a prayer meeting last week. Most of the ladies in our church made some sort of appetizers to share with everyone after the prayer meeting. My goodness, the ladies in my church can cook!!! While many of them made beautiful AND great tasting food, I took very simple things. I took Chocolate Chip Cookies, Sausage Cheese Balls and Frozen Orange Balls. My sister and I actually called these Orange Basketballs when we were younger. Whatever you call them, however, just remember to call me when you make them!! These are GOOD!! Just make sure they are eaten pretty soon after you get them out of the freezer- they get kind of mushy when they start thawing. They still taste incredibly awesome, but they get a little messy.

Frozen Orange Balls

1 (12 ounce) box vanilla wafers
1 (6 ounce) can frozen orange juice concentrate
1 box powdered sugar
1 stick butter or margarine, softened
1 cup nuts (optional)
Coconut

Crush vanilla wafers and mix with sugar, butter, orange juice concentrate and nuts (if used). When thoroughly mixed, roll into balls and then roll in coconut. Freeze. Serve frozen.

I actually made this!!!!

I have to be honest with you. I am not artsy. I can draw a picture and I can cook up a meal (and I can crochet but it takes a REALLY, REALLY long time), but I cannot make pretty things for our home. Well, I couldn't until recently. And, like I said yesterday, this past week of being lost in cyberspace with our computer down, I've accomplished a good bit more than I thought I could.

Mrs. Wilt has inspired MANY of us to get creative in the home and this past weekend I actually decided to make a go of it and try to create a fall wreath for our door. Here's what I started with...



- a grapevine wreath
- some plastic apples
- a spool of some ribbon that matched the apples
- a plastic "zip" fastener
- hot glue gun



First, I decided which part of the wreath I wanted to be the top so that I could then wrap the ribbon around the grapevine wreath and hot glue it at the starting point and the ending point. I started the ribbon at the bottom of the wreath so that it would be hidden behind the apples and bow (you'll see what I mean with the finished picture). Then I used the "zip" fastener (sorry, I don't know the official name of the thing) to fasten the apples onto the back of the wreath. Lastly, I tied the bow and hot glued it into place. Voila!! A simple, fast and easy-enough-for-me wreath to welcome our guests to our home!!!

Amazing things have been happening while our computer has been down this past week!! Okay, well, maybe not AMAZING, but... do y'all remember me telling you about how long I've been working on my son's crocheted blanket? Well, lo and behold... drum roll puh-lease.....

I AM FINISHED!!!!!!!!!!!!!!!!

Yes, I know, most of y'all that truly know me are probably having a heart attack right now, but it's TRUE!! Here's a picture to prove it.


Yup, that's him asleep with his new blanket. So, while it was hard being separated from email and the online world this past week, I did accomplish a good deal!! I've even started a blanket for our daughter, Elizabeth!!! I wonder just how long this one will take me, huh? Any bets?

Computer problems...


I am sitting in our public library right now with some very sad news to share. Our home computer is out of commission for a few days. Yes, our family is floating around somewhere out in cyberspace until we are up and running again.

There are several words that I have heard Mr. U say lately like "mother board", "bios", "video card" and "processor". I have no idea what any of these words mean, but dear Mr. U does and will have our little problem fixed in just a matter of days (we're waiting on some part to come in the mail).

Recipe Box: Show & Tell


Deb over at Mountain Musings is hosting a Recipe Box: Show & Tell!! What fun!! She asked us to take a picture of whatever we use to store our recipes in. Well, this is mine. HAHA!!

I received this simple wooden box at one of my wedding showers almost 8 years ago. Underneath, you can see a manila folder. It’s ugly and unorganized, but chock full of really good recipes!! I’m not sure whether “the box” or “the folder” has more good recipes, but I love them both!!

A few years ago, a sweet lady at church gave me a beautiful binder so that I could organize my recipes. As you can tell, however, I have not done that. If and when I do that, I'll be sure and post about it here! But, that's a big "if"!!

Here’s where I keep all my cookbooks. I LOVE cookbooks and enjoy sitting down to read them just like one would read a regular book.

Bible study guests tonight!!!!

Tonight we are having a college and career Bible study in our home. I just love having people come over and when you add to that studying the Word, wow!! Does it get any better??!!

I’m planning on having some refreshments. Along with coffee and sodas, I’m serving my BEST Brownies (you know, the ones that are super fattening and delicious!!) and Sausage Cheese Balls. I hardly ever make these Sausage Cheese Balls because they are really fattening, too. I like to make them for special occasions. Mr. U just loves these and was happy to hear that tonight qualified as a “special occasion”!!!


Here is the recipe for the Sausage Cheese Balls. Very simple and very good.

Sausage Cheese Balls
1 pound uncooked sausage (I use hot)
3 cups Bisquick mix
4 cups of extra sharp cheddar cheese, shredded

Crumble raw sausage into large bowl; add cheese, and mix well with hands. Blend Bisquick mix into sausage and cheese mixture. Shape into 1 inch balls. Place on ungreased cookie sheet. Bake at 350 degrees for 10-12 minutes.

A freshly mowed lawn...

I recently shared about how I LOVE to vacuum and I REALLY love the nice lines that are in the carpet when I’m finished. Well, I also REALLY love the lines that are in the grass when Mr. U is finished mowing!! And here they are- you can see some of the lawn with “the lines” and our faithful cat, Sam, who insisted that he be in the picture, too!! Mr. U just mowed this morning, so the yard looks so fresh. I just love a freshly mowed lawn.

Reuben Sandwiches!!

Mr. U LOVES a good Reuben sandwich. Whenever we are eating at a new restaurant that serves them, he always has to try it and see if it’s “the best he’s ever had”. While he has had some really good Reuben’s at restaurants, his still LOVES the way his dad makes them- quick and easy!! Here’s the recipe…

Mr. U's Famous-In-Our-Home Reuben's
2 – 12 oz cans of corned beef
3- 14 ½ oz cans of sauerkraut
8 oz of thin sliced Swiss cheese

In a 9x13 pan that has been sprayed with non-stick spray, empty both cans of corned beef. Spread the corned beef to cover the bottom of the pan. Next, drain the cans of sauerkraut. If you don't drain them very well, the extra “juice” that is in the cans will cause your sandwich to be too “soupy” and very difficult to eat. After you have drained the extra liquid from the sauerkraut, pour the sauerkraut on top of the corned beef and spread it around to cover the pan. Last, layer the cheese all over the top so that every part of the sauerkraut and corned beef is covered. Bake in a 400 degree oven until it starts to bubble a little around the edges and the cheese is melted on top.

This will make 8 good sized sandwiches. Just cut into 8 sections and serve on whatever kind of bread you want (I believe it’s traditionally served on rye bread) and top with mayonnaise, mustard, thousand island or Russian dressing, pickles, or whatever you like on your Reuben sandwich!!!

Movies. I’m sure most of us watch them. Have you ever rented a movie or gone to the theater to see a movie that is rated PG (or even G) only to find out it is NOT something neither you nor your family should be watching? If so, check out Screen It. They give very up-to-date movie reviews and have TONS of movies reviews from the past.

When you first go to the site, they will ask if you want to join. You can join if you like, but you can also click on “No Thanks” at the very bottom of the page and you can continue on to look at the movie reviews.

The next page will bring up different options. When in doubt, just click on “search” and type in the name of the movie review you want to read. A Google bar will then come up so make sure you type in the name of the movie and that “search Screenit.com” is clicked before you hit “Google Search”.

We use Screen It for ALL of our movie reviews. Some of the movies that come out look very interesting and some of them look quite funny. However, when we go to Screen It and read the review for a movie, it is often SHOCKING at the things that are said and the situations that are presented (and oftentimes, the body parts that are revealed!!).

Try Screen It and see what you think. I am so very thankful for their site and their reviews. There have been MANY movies that we have not gone to see after reading the horrible review. I have been very thankful that the Lord has made us aware of Screen It.

A home is a place of safety and part of making a house a home is protecting it from harm. Harm can easily come in when we allow movies that are not honoring to the Lord into our home. Little hearts and minds (including big hearts and minds) can be led astray by the world and its ways so quickly. Don’t let harm be brought in by you. Read the review of the movie BEFORE you watch it with your family. It’s worth it.

A freshly vacuumed floor...

In my opinion, there is something so nice about a freshly vacuumed floor. I just love the lines that the vacuum cleaner makes and the way the carpet gets all fluffed up. Then, when you first walk across it, your footprint is left behind. I like vacuuming when no one is here, just so I can sit and enjoy looking at the carpet. HA! I know. I sound silly, but it does my heart good to see clean carpet.

When we first married, I asked Mr. U what part of keeping a home meant the most to him. His answer? Vacuuming!!! Before we married, I could not have cared less about vacuuming (just ask my mother!!). But, for Mr. U, I’d happily do it. You know what? As it has turned out (much to my mother’s surprise), I LOVE vacuuming!!! Look what I had been missing out on all my life!! Who knew?

My vacuuming days are usually Mondays and Thursdays (unless company is coming, then I’ll pull my trusty Bissell out and do extra vacuuming). Yesterday, however, I didn’t have time to vacuum (all those errands I had), so I vacuumed today. So, here I sit, at the computer, drinking a Diet Coke and enjoying all the fluffy carpet and wishing that I could walk on air for a bit so that it would stay just like it is- lines and all.

I just love a freshly vacuumed floor.

Our lunch recipes…

Our lunch today was absolutely delicious!! I wish y’all had been here to eat with us. Food always tastes better with lots family and friends around, doesn’t it?

Here are the recipes that I promised from our meal of balsamic marinated chicken, mashed potatoes and roasted asparagus. Enjoy!!!

The balsamic marinated chicken recipe I actually shared in this post. Boy, is it good and easy!!

Mashed Potatoes
Red potatoes, washed and diced
Butter
Milk
Garlic
1 T mayonnaise (that’s a Southern secret, y’all!!!)
Pinch of salt

Put your potatoes in a pan, cover them with water and bring to a boil. Let them gently boil for about 20 minutes or until potatoes are fork tender. Drain the potatoes and pour them into a bowl. Add about ¼ cup of milk, ¼ cup of butter, a pinch of salt and garlic to taste (either fresh minced garlic or dry granulated). With a potato masher, mash the potatoes and mix in the ingredients at the same time. You may need to add more milk or more butter (or both!) depending on how you like them. When you have mashed the lumps out, taste the potatoes and see if they need anymore garlic. If so, add it in and stir it up well. Now, stir in 1 T of mayonnaise. Yes, this seems strange, but TRUST ME!! You can’t taste the mayonnaise, but they make the mashed potatoes even creamier!!! Now just serve them to your family!!

(I mentioned using red potatoes, but that’s just me. Be sure and try whatever kind of potato you have on hand. Homemade mashed potatoes are SOOO much better than the boxed ones!!)


Roasted Asparagus
Fresh bunch of asparagus
Extra virgin olive oil
Salt
Pepper

Trim the asparagus ends by holding each stem by both ends and gently bending. The asparagus will “pop” into two pieces and the bottom half that breaks off is not as fresh as the top part. Discard the bottom pieces and rinse all the top pieces in a colander under cool water. Dry on paper towels then place them on a cookie sheet. Drizzle asparagus with about 1 tablespoon of extra virgin olive oil, a pinch of salt and pepper.. Using your hands, toss the asparagus around until each piece is coated with olive oil.

Bake in a 400 degree oven for about 15- 20 minutes or until you smell the asparagus cooking in the oven.

This seems to cool quickly, so be sure and cook it right before it’s time to sit down and eat.

Lunch is started...



Today is a busy day in our household. I have many errands to run this morning, so I've already started lunch. Why lunch? Well, Mr. U is a pastor and we live right next door to our church and everyday he comes home for lunch. We decided about 6 years ago to make lunchtime our main meal of the day. So, come dinner time, we may have a sandwich or some leftovers, but we eat our biggest meal of the day in the middle of the day. We really enjoy it like this.

Anyway, since I have to leave early this morning, I got up and got some chicken marinating in a balsamic vinegar marinade. Just making the marinade made me hungry for lunchtime- it smells soooo good! Mr. U will grill the chicken for lunch. Yummmy!!!

Also, I chopped some red potatoes. I chopped up about 2 pounds of them after washing them. I like to leave the skin on them because there is so much fiber in the skin. I am leaving them in a cold pot of water on the stove. When we return home later, I will simply have to turn the eye of the stove on to get these potatoes cooking!

Last, I have the asparagus all ready to cook, too. I bought some fresh asparagus two days ago and can't wait to eat it! The stalks were very thin and green- perfect, in my opinion!! Asparagus isn't hard to cook or prepare, so there isn't anything to "ready" before I leave this morning. When I return home, I will rinse them in cold water and "snap" off the ends that are no good. Then I will roast them in the oven.

My biggest laundry helper!




Laundry. We all have it. Some of us have more of it than others. Some of us have dirtier laundry than others- especially those of us with boys!!

I LOVE the Spray n' Wash Stain Stick!! I unscrew the lid and swipe the stick on any stain and they ALWAYS come out. No joke. Ring-around-the-collar comes out. Grass stain? Yep, I get that out. Ink? Not a problem. Greasy burger dribble on your favorite shirt? Stain Stick removes it ALL!!

Sometimes I put it on the stain when I'm putting the laundry in the washing machine. Most of the time, though, I put use the Stain Stick on the stain when I take the garmet off and I just toss it in with the other dirty clothes until laundry day. Whether I'm pretreating an item of clothing or putting it on a stain I just discovered as the washing machine is being loaded, it doesn't seem to matter- this stuff works for me.

Stain Stick is such a huge laundry helper!! I always make sure that I have this in my laundry room!!!

It's happened!


Well, it's finally happened. Have you seen it at your house? Have you noticed? What? You don't know what I'm talking about? Well, here at my home, the sun is shining just a tad bit different than usual.

This happens about this time every year and I always look forward to it. Something about the way the sun is shining is out of the ordinary. Almost more clear. For years, I thought my mom and I were the only ones to notice this phenomenon. I've recently discovered that others notice it, too. So, while this may sound like strange ramblings on this post, I am ECSTATIC. Why? Do you know what this means? Fall is coming!!! Not anytime soon, mind you, but it is on it's way.

So, to celebrate the fact that the sun is shining in a rather uncommon manner today, I am going to light my favorite fall candle tonight!! Which one? Aaahhh- Pumpkin Pie by Yankee Candle. LOVE LOVE LOVE it!! I'll be thinking of y'all tonight as I enjoy it's scent and while I'm STILL working on "the afghan".

Remember to pray for the persecuted



Have y'all ever heard of The Voice of the Martyrs? They are a wonderful ministry that works hard to keep all of us comfortable, well-fed, "I-own-8-Bibles-all-my-own" American Christians aware of what our brothers and sisters in Christ are suffering for His Name around the world. Very sad stories, but they are true. We need to remember to pray for our fellow believers that are in chains for the gospel. They suffer what we will, hopefully, never personally experience. While it is hard to read of their persecution- and often it is gruesome- I think it is necessary. We all get so caught up in our self-made worlds, that we fail to see outside of our own little sphere. Look. Read. Try to imagine what Christians in Iran, China, India, etc, go through on a daily basis. Then, pray. Pray for God to give them great strength to stand. Pray for God to save their persecutors. And pray that we will stop looking at ourselves long enough to realize that this world is all about the Lord God Almighty.

Remember their chains.

Exercising for a healthier home!!!




Let’s get the facts straight. I am not athletic. I am not an outdoorsy person. I don’t camp. I like hotels. I like the mall. I like tearooms over ballgames any day. BUT, I do have to exercise. Not only does Weight Watchers tell me that I am supposed to, it’s just plain old good for me!!! Plus, add to all that that exercise blessed my family by making me healthy to care for them!!

Here’s just SOME of the benefits I found at the Mayo Clinic site in their excellent article entitled “Aerobic exercise: What 30 minutes a day can do for your body”:

-Increases the diameter and number of small blood vessels.
-Avoids overheating.
-Reduce your risk of coronary artery disease.
- Reduce your risk of developing hypertension (high blood pressure).
-Improve blood fats
- Reduce your risk of stroke
- Reduce your risk of developing some cancers
- Reduce your risk of developing type 2 diabetes
- Ward off viral illnesses.

My favorite form of exercise is walking!! I love to walk outside with a friend and talk or walk alone with headphones on. I love to walk on a treadmill, on a street near the house or on a high school track- doesn’t matter. But, I am most often not able to do any of these. Mr. U usually exercises the same time each morning that I do and I let him use the treadmill. So, I will pop in a workout video and do my second favorite form of exercise- Walk Away the Pounds with Leslie Sansone!!!

The next time y’all are exercising, remember that not only is it good for YOU, but it’s also good for your family. You are making your body healthier so that you are better able to take care of your husband and children and you are also setting a great example of how to live a healthy life.

So, I’m wondering, who exercises on a regular basis? What do you do for exercise? If you don’t exercise regularly, get motivated and be healthy for your future and your family!!!!

Recipe Swap: Summer Salads

I posted this a little while back, but since it's our favorite, I just HAD to post it again. We just love it here at our home!!


Spinach Salad
1 bag of triple washed spinach (so you don't have to wash it yourself)
1 can of mandarin oranges (I like the BIG can!!!)
1/4 red onion, thinly sliced
1/2 cup mayonnaise
1/2 cup zesty Italian dressing

Put spinach, mandarin oranges and red onion in a serving bowl. For the dressing, carefully combine mayonnaise and Italian dressing until completely mixed together. Serve dressing on the side.

Everyone seems to really like this very simple salad (even those non-spinach eaters!!). You could even put in some sliced fresh mushrooms or even some sliced avocado. Recently, we grilled chicken and chopped it up into bite-size pieces and tossed it in with the salad. YUMMYY!!!

A funny thing happened while talking with a mannequin...


We had the rare opportunity to visit another church tonight. On the Sunday we have Homecoming, our evening service is always cancelled. So, we visited another church in our area.

While the people were friendly, they weren’t warm and welcoming. All I could think was, “This is definitely not a church I would want to join”. As we left, though, I couldn’t figure out just why the people weren’t warm and welcoming. Sure, they all came up and shook our hands and smiled at us, but not one person introduced themselves. No one even asked our names. We felt like cattle being herded through the masses. “Hi! Nice to have you here!” smile… smile… “Glad you could join us!” smile… smile…I felt like I was looking at a bunch of smiling mannequins.

Though I didn’t have the best visit at this church (and please don’t ask me how the sermon was), I did learn several things about what members of a church, no, what Christians in a church should act like toward visitors.

- When you greet someone, smile. Not a quick smile, but the kind of smile you would make toward a friend. One that shows you are interested in them.
- Make and keep eye contact. LOOK at the person you are talking with. Don’t keep looking around at what all of your church friends are doing.
- Say more than just “Hi, my name is Mrs. U.” Something like “Hi, I don’t believe I’ve had a chance to meet you yet. My name is Mrs. U. What is your name?”
- Then, carry the conversation forward a bit. “Oh, Nancy, it’s very nice to meet you! Do you live in this area? Oh, over in Danville! Why, I drive through there all the time. It’s such a lovely town. How long have y’all lived there?” And let the conversation progress a bit.
- When you end the conversation, say something like “Well, Nancy, it sure was wonderful getting to meet you. I hope you and your family are able to come back next week. I’ll be looking for you. Oh, and I would love to introduce you to some of the ladies in my Sunday School class next week!!!”

Now, this is just a sample of what you could say and, of course, you could say a lot more. But it is A LOT more warm and friendly than I experienced tonight. Tailor a conversation that fits you. Some of us will often become friends with someone right away and, in that case, get their address and send them an encouraging note during the week. Some people are able to speak to new people a whole lot easier than others. Some people are more shy. But we ALL should push ourselves out of our comfort zones and out of the little “cliques” that often form in churches.

Ladies, we call ourselves Christians, followers of our Lord and Savior Jesus Christ. But are we acting like Him? How would Jesus react/ act toward new people that He was around? Truly, He would be “kind”, but don’t you think He would also be “warm and welcoming”? Let’s all ask the Lord to give us awareness of new people around us at church and that we MAKE the opportunity to reach out to them and welcome them in.

Bath & Body Works- Breathe Romance

In my post yesterday about scents, I failed to mention how much I LOVE to smell nice. I especially like to smell nice for Mr. U. However, in the almost 8 years we've been married, it has been very hard finding a scent that we both LOVE. He tends to like the warmer smells (vanilla, bergamot, etc) and I tend to be drawn toward flowery or clean scents (peony, plumeria, gardenia, green tea, white tea, etc), so choosing one that we both like has been hard.

Well, today I think we may have found a scent that we both like!!! It is by Bath & Body Works and is called Breathe Romance. It smells somewhat warm, but also has a very clean scent that I am drawn to. I bought the body lotion, so if this goes over well, I may go back and buy the fragrance mist, too!!!

So what about you? What fragrances do you AND your husband like? Have you found one that you both enjoy to smell on you? :)

What are your children looking at online?

Oh dear. I just read over at Dead Theologians a very sad article. Reticent Extrovert was at the public library and discovered some "young teenage girls" looking at some horrible sites. Ladies, do you KNOW what your children are looking at online? Don't just assume that "oh, they are at the library. They can't look at anything bad online at the public library." Oh, guess again, mothers!!!

Anyway, I think the upcoming posts from this link should be very eye-opening. I, for one, need to be more aware of cults and not just turn a blind eye to them. They exist- even here in my small town. Oh how I want to protect my family from being blindsided by something that could so easily lead them (us) astray.

Getting ready for Homecoming this Sunday...

Our church is having Homecoming this weekend. Homecoming is a time when old church members usually return to meet up with old friends and often hear a previous pastor. This year, however, Mr. U will be preaching- always a treat for me to hear him!!

After the service, we will have a covered dish supper. I am taking a chocolate cake (Hershey's "Perfectly Chocolate" Chocolate Cake) and a hashbrown casserole. I made the cake layers tonight and put them in the freezer and I will put the frosting (or "icing" for some of us) on the cake tomorrow night. A lady in our church owns a bakery and told me that it is easier to frost the layers when they are frozen PLUS the layers are more moist when they thaw. YUM! I've been doing it this way for years. People must like the cake because I never have any extra to take home with me!!

The hashbrown casserole is sooo easy and delicious!! I don't make it often, but when I do, it usually gets eaten quickly! I will put this together in my 9 x 13 pan tomorrow night. I pull it out to come to room temperature Sunday morning (about 45 minutes) and then bake it. I LOVE when I can prepare things ahead of time. Oh, and here's the recipe. It's always a crowd pleaser. My husband LOVES to have this with a big, juicy steak off the our grill.

Hash brown Casserole1 (32 oz) bag frozen hash browns
1 can cream of mushroom soup
12 oz grated American cheese
8 oz sour cream
½ cup chopped onion
1 tsp salt
2 cups crushed corn flakes
½ cup melted butter

Grease casserole, empty hash browns and smooth out. Mix soup, cheese, sour cream, salt and onion together and spread over potatoes. Cover with cornflakes and drizzle with butter. Bake at 350 degrees for 45 minutes.

(Just in case y'all wondered, NEITHER of these recipes are Weight Watcher friendly!! LOL!! But it IS a special occasion, right? )

The Power of Scent




Oh, how I LOVE fresh smells! The smell of a freshly mown lawn, homemade bread coming out of the oven, freshly picked flowers in a beautiful vase, just washed babies, clean laundry, etc. You get the picture. That's why this post from Homeliving Helper meant so much to me. Lady Lydia's article entitled "Home Scents" really points out some much needed areas that we all need to keep clean and tidy in order for our home to always smell clean and welcoming. Well, don't just take my advice, read the article for yourself. Then let me know what part of her ideas you are going to actually use in your home.

Welcome sunflowers!!!!

For four years in a row, I have planted sunflower seeds in the hopes of having beautiful, smiling sunflowers to grace my table with. After all the failures, I FINALLY have sunflowers growing!!! I don't know what I did differently this year, but it worked!! I am so very excited to have these growing in my yard!! These aren't very tall- maybe 2 feet. I would LOVE to be able to grow the GIANT sunflowers one year, too!! I am just too happy to have discovered these this morning. I went out to weed a part of the garden, I looked up and there they were!!! Happy yellow sunflowers saying "Good morning!!!" in all of their glory!!!!

The Lord sure does grow some awfully nice flowers, doesn't He?

The favorite room in your house



Tami over at Time with Tami recently asked "How about you? What is your favorite room in the house - and why??" Good question, Tami!!!


My favorite room, by far, is my kitchen. Not because it's the most beautiful, but because it's the most FUN!!! Our kitchen is very small and I hardly have any counter space, but I love to get in there and "play" and create wonderful, healthy (and sometimes not-so-healthy! LOL!), great tasting meals!!! I love to look out my back window and see the tomatoes that are VERY slowly turning red. I have sunflowers that making their way out of the soil, too. We have two dogs (Martin and Katie) that I watch play in the backyard. So, while it's not my dream kitchen, it's the kitchen that I dream in!!
