Pumpkin Cobbler...

I LOVE pumpkins!!! Not only are they cute and round and sporting a FABULOUS color, but they are darn tasty, too!!

Today I received a catalog from Gooseberry Patch. Sure, they sell some really great products, but I found a delicious RECIPE in the catalog, too!!! I haven't made it yet, but I will. I just HAD to share it with y'all before I forgot about it.

If you try it, let me know how it comes out. Hooray for pumpkins!!!

Pumpkin Cobbler
3 eggs, beaten
15 oz can pumpkin
12 oz can evaporated milk
1 cup sugar
1/8 t salt
1 ½ t cinnamon
1 t ground ginger
1 T vanilla extract
18 ¼ oz pkg. yellow cake mix
1 ¼ cup margarine, melted
1 cup chopped nuts

Mix the first 8 ingredients and pour into an ungreased 9x13 pan. Sprinkle cake mix over the top and drizzle with melted margarine. Bake at 350 degrees for 25 minutes and then top with nuts. Bake for an additional 15 minutes. Makes 15 to 18 servings (or less if you are serving people that LOVE pumpkin and LOVE desserts!! LOL!!!).

That sounds good! I love pumpkin too! I love to eat pumpkin puree with just a bit of cinnamon and honey. Mmm...delicious!

Yum, I Know I will love this because if I had any choice of pie to eat I would always choose pumpkin! Love it:)
