Pumpkin Muffins...

Easy and SO delicous!! And these freeze nicely, too! Perfect to have on hand for on-the-go breakfasts or a quick snack! Yum!

2/3 cup firmly packed brown sugar
1/3 cup white sugar
1 tablespoon baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1/4 teaspoon baking soda
1/4 teaspoon ground ginger
1/4 teaspoon nutmeg
1/2 cup butter, melted
1/2 cup canned pumpkin
1/3 cup buttermilk
2 eggs, slightly beaten

1 Heat oven to 400 . Stir together all ingredients except butter, pumpkin, buttermilk and eggs in large bowl. Stir together all remaining ingredients in medium bowl. Stir into flour mixture just until moistened.

How to make hard-boiled eggs...

I love hard-boiled eggs. Especially when they are cold and sprinkled with just a smidge of salt. Mmmmmmm. Reminds me of picnics with my sister and our next door neighbor, Cathy, when we were little girls. We would picnic in either our backyard or Cathy's and my mom would send us out with hard-boiled eggs and bologna and lettuce sandwiches. A true feast for a small child!!!

In the not too distant past, I've had issues making hard-boiled eggs. They may taste fine, but they would always end up with that weird greenish looking ring around the yolk. Ick. It was NOT appetizing looking in the least!! So, I discovered the boil-and-walk-away method...

The boil-and-walk-away method

For another way to hard-boil eggs, begin as directed at left with the eggs in cold water, but once the water reaches a brisk simmer, turn off the heat and let the eggs sit uncovered in the hot water for at least 10 minutes and up to 30 minutes— the water cools gradually, preventing the eggs from overcooking. This is a great method when you’re multitasking and can’t pay careful attention to the eggs.

This works perfectly for me everytime!!

Now... to find a spot to picnic....

Making a house a BEAUTIFUL home??

Sure, I can cook and I can keep our home clean, but decorating? I will be the first to admit that I can NOT decorate. I have no idea where to start. Even when it comes to painting the walls someone might tell me "Oh, just pick your favorite color" but I have about 10,000 favorite colors!!

My sister, now SHE can decorate, let me tell ya!! Her house is GORGEOUS and I am pretty sure that Better Homes & Gardens would have NO problem sharing photos of HER house in their magazine!!

It's not like I have dreams of a palace like this one...

No... I like a smaller home. It's easier to clean and SHOULD be easier to decorate. Except, well, like I said, I am clueless about home decorating.

I recently have decided that I NEED to do something to make our home look a little more up-to-date (instead of 1998's finest curtains complete with balloon valance... Yes, I still have that old balloon valance... I told y'all I can't decorate!!!). And to help me, I have found some GREAT blogs with ideas!!! I've been reading, getting ideas, talking to my sister (thank you, Leslie!!!) and I'm going to slowly start making changes. Of course, I'd RATHER have Candice Olsen decorate, but on a pastor's salary, I'm pretty sure we couldn't afford her.

These are the blogs that have encouraged me to do something to make this home a beautiful home:

- Nesting Place (I am LOVING her mistreatments!!!!)

- The Inspired Room

- My Romantic Home (Mr. U would SO not go for this, but it sure is pretty!!!)

Now I would LOVE to hear of more inspiring decorating blogs!!! PLEASE share them! I need all the ideas I can get!! We have a clean home, we have a well fed home, but I would LOVE to have a charming home, too.

Who is supposed to serve?

I received this email yesterday from Nancy Leigh DeMoss. How I appreciate her ministry!!

Who is supposed to serve?

In the past couple of decades, there’s been a movement challenging men to love and serve their wives. Every woman I know is very encouraged when we see God turning men’s hearts toward the Lord and their families.

We need to remember that God didn’t make men to be helpers to their wives. God made the wife to be a helper to her husband. In today’s evangelical world, it’s “politically correct” to challenge men to go home and serve their wives. It’s not so popular to talk to women about their responsibility to serve their husbands.

If we as women focus on what we think we deserve—what men “ought” to do for us—we’re likely to get hurt and resentful when our expectations aren’t fulfilled.

If your husband’s learning to serve you, that’s great. But remember, you’re never more like Jesus than when you’re serving other people.

How is your cursive handwriting?

I read an interesting article yesterday about cursive handwriting. It stated that cursive is a dying art. Apparently, children are still being taught cursive in public school, but it isn't expected of them to write in cursive after fourth grade. Many children, by the time they are in high school, prefer to write in print because it is faster and many students actually said they had FORGOTTEN how to write in cursive!!!

So how is YOUR cursive handwriting? How often do you write in cursive? Challenge yourself this week to write in cursive each time you need to write something! It may not be prettiest when you first start, but practice will definitely improve your handwriting!!!

Anyone up for the challenge?

Coconut Cream Pie...

A reader of this blog emailed me yesterday with photos of her yummy looking Coconut Cream Pie!! She did celebrate National Pie Day in her home, but she wanted to share with us in the blogging world, too. Since she doesn't have a blog (yet!!), she sent the photos, too. YUM!!! And I especially love how she made little individual pies for everyone!!!

Coconut Cream Pie

1 (9 inch) pie shell, baked
1 (5 ounce) package instant vanilla pudding mix
1 1/2 cups milk
1 1/2 cups flaked coconut
1 (8 ounce) container frozen whipped topping, thawed

-In a large bowl, combine the pudding mix and milk until the pudding mixture thickens. Fold 1 cup of coconut and half of the nondairy whipped topping into the pudding. Pour the combination into the prepared pie crust.

-Spread the remainder of the nondairy whipped topping on top of the pie. Sprinkle with the remainder of the coconut. Refrigerate, and serve chilled.

A note from Ellen...

As you can see I opted out of the toasted coconut topping....I ran out of time! I also added a smidge of coconut flavoring since I love coconut!!

Happy National Pie Day!

National Pie Day is TODAY!!!!!!!!!!!!!!

Happy National Pie Day!!!

Today, to celebrate National Pie Day, I have made Sour Cream Apple Pie Deluxe. Would you care for a piece?

Of course, Elizabeth was my helper during the whole process. When I asked what kind of pie she would like to make, the only thing she could say was "Apple pie, Momma!!!!" So, apple pie it is, except with a little twist.

(Yes, those are her pajamas. We made the pie before breakfast.)

Here's the recipe I used...

Sour Cream Apple Pie Deluxe

For the filling:
1 unbaked 9 inch pie crust
3/4 cup sugar
2 tablespoons all-purpose flour
1/8 teaspoon salt
1 cup sour cream
1/2 teaspoon vanilla extract
1 egg
2 cups diced apples (I used 4 cups. Hey, I love apples!)

For the topping:
1/3 cup sugar
1/3 cup all-purpose flour
1 teaspoon ground cinnamon
1/4 cup chilled butter, diced

DIRECTIONS
- Preheat the oven to 425 degrees F (220 degrees C). Press the pie crust into and up the sides of a 9 inch pie plate.

- In a medium bowl, stir together 3/4 cup sugar, 2 tablespoons of flour, and salt. Mix in the sour cream, egg and vanilla until smooth. Add apples, and stir to coat. Scrape the mixture into the pie shell.

- Bake for 15 minutes in the preheated oven, then reduce heat to 350 degrees F (175 degrees C), and continue baking for 30 minutes more.

- While the pie is baking, prepare the topping in a medium bowl. Stir together 1/3 cup of flour, 1/3 cup sugar, and cinnamon. Cut in the butter until the mixture resembles fine crumbs.

- After the 30 minute bake time has passed, cover the top of the pie with the crumb topping, and continue to bake for 15 minutes, or until topping is lightly browned and apples are tender. Allow the pie to cool, then refrigerate until chilled before serving.

I hope some of y'all will join in the celebration today and make a pie for your family!! Pies can be savory (think quiche!!), so you don't have to make only a sweet dessert type pie for your family. And please do NOT think that you have to make homemade pie crust!! OH DEAR NO!! You can easily buy a premade pie shell from the grocery store (frozen food section) and still bless your family with a pie!!

And if you have made a pie and posted about it on your blog today, PLEASE sign up here so that we can all come and enjoy a piece of your pie with you!!

I hope everyone has a wonderful National Pie Day!!!

Pie...

Note to all of y'all participating in the celebration of National Pie Day... :) Be sure and come back here on Friday and I'll have Mr. Linky up to help us celebrate!!!

Ahhh..... the thought of National Pie Day this Friday sure does make my mouth water!! Just think of all the homes across America that will be baking pies to celebrate!!!

Actually, I wonder how many people actually KNOW about this great day??

Anyway, I would LOVE to hear about your favorite pie crust recipes!! I must admit, I have this secret fear of making pie dough. And then add to that the fact that Mr. U has never met a homemade pie crust that he likes.... gracious... I've got some steep mountains to climb!!!

For this Friday, I've decided to try my hand at Pioneer Woman's Perfect Pie Crust recipe. It looks easy enough, but will Mr. U like it????

So if y'all have time, would you mind sharing your pie crust recipes? And if you have any secrets to making a great crust OR directions on how to actually make those pretty edges, PLEASE SHARE!!!!

(Photo from Batter Splattered- check it out!! Some mouth watering recieps!!!)

I can knit!

Okay, so I haven't gotten very far AND it is not very good at all, but hey, it's a start, right? Since this is so thin and I would LOVE for it to actually become something, I suppose it'll be a scarf. Of course, by the time I finish (this takes much longer than crochet!!!) it'll be 2010!!! HA!!!

I'd LOVE to see any projects y'all are working on! Please share what you are currently creating in your home!!

National Pie Day - January 23, 2009...

Oh y'all! My sister just sent an email to me informing me that next Friday, January 23, is National Pie Day!!!!!! Here are some ideas about celebrating this special day!

Eat pie. Whether you make it yourself, buy it at a supermarket or bakery or order it at a restaurant, eat some pie on National Pie Day. Pie is great with lunch or dinner or as a late-night snack.

Make pie. Bake your favorite homemade pie on National Pie Day.

Share pie. If you make or buy a pie, share it. By its very nature, pie is meant to be eaten with others. Have a pie potluck get-together.

Let's all bake a pie and blog about it next Friday! What fun! Anyone else with me?

Now... how to narrow it down to only ONE pie to bake for that day... hmmmm....

My beloved water...

That, folks, is a picture of my beloved water in our kitchen sink. Why is it so special to me? We have been on well water and we have, by far, the, BEST tasting water in the world! No joke!!

Just now, however, the workmen came and hooked us up to "city" water. SO SAD! I didn't even know they were going to do it today. I didn't even get one last glass of the gloriously clean and cold well water!!

If any of y'all have ever had to switch from well water to city water, you are aware of the difference in taste. I do not look forward to the adjustment.

And for any of y'all that have never had well water, no we do NOT go out to a well and pull it up by the bucketful! HA!

In the cleaning mood???

It seems like a lot of us are in the cleaning mood lately!! I just read over at Heather's blog, A Place of Quiet Rest, some wonderful recipes for homemade cleaning products!! So if you are in need of cleaning supplies, head on over there, make the cleaner of your choice and get to cleaning your home!!!

The Simple Woman's Daybook... January 12th, 2009...

FOR TODAY- Monday, January 12, 2009...

Outside my window... the sun is slowly starting to come up. In the back of the house, I can see the slight sunrise. In the front of the house, I can still see the full moon, round and shiny.

I am thinking... what a busy day I have today! I am taking Elizabeth to meet one of her friends (and her mommy) so they can play and then have lunch together.

I am thankful for... electric blankets!! Last night was chillier than it has been lately and I was SO happy to get into my warm bed!!

From the kitchen... Tonight we are having a ladies fellowship at church. The theme is "Comfort food" and I am taking meatloaf and pop tarts! HAHA! Yep, pop tarts! (I'll have to blog about pop tarts another day!)

I am wearing... a tan skirt, brown knit shirt and brown ballet type shoes.

I am creating... a huge mess of jumbled up yarn that is SUPPOSED to be knitting!! This doesn't come as naturally to me as it apparently does to some of y'all!! OH MY!!!

I am going... to run errands this morning and to meet Elizabeth's friend and her mother.

I am reading... Tea With Jane Austen LOVE IT!!!

I am hoping... that Elizabeth gets over her icky sinus stuff soon!

I am hearing... nothing. Everyone else is still asleep on this chilly morning. The only thing I hear is the gentle hum of the heater and the clicking of the keys on the computer.

Around the house... Today will be laundry after we get back home from lunch and errands.

One of my favorite things... affiliate programs!! Vision Forum just mailed out our first check for being in their affiliate program!! We are currently saving up for our next adoption and this will go into our adoption savings account!!!!(See the top of my right side bar for Vision Forum.)

A few plans for the rest of the week: just regular things this week- cleaning, laundry, groceries, cooking. BUT... my sweet friend and her new husband are supposed to be coming over Friday night! I am SO excited!!!

Here is picture thought I am sharing...

(Yes, I know this is an out of season photo, but this is the best photo I have of Elizabeth and her friend, Mason-Kate, that we're having lunch with today.)

You can enjoy more Simple Woman's Daybook at Peggy's blog. Have a blessed day, y'all!

Let's get vacuuming!!!

You know, normally I like to share pretty pictures on my blog. Lovely photos that remind us of lovely things. But not today. Today I share these...

Why do I share these horrid photos? Because y'all, these are dust mites. And when you find dust in your home, THESE LITTLE CREATURES ARE THERE, TOO!!!!!!!!!!!!!!!

Yesterday, Mr. U and Joshua moved our INCREDIBLY HEAVY bed so that I could vacuum underneath. I can not tell you the last time that I vacuumed under there because, well, uh, um, I, uh, do I have to admit that here? I, uh, sighhhhhhhhhhhh, I have never vacuumed under there.

Oh dear.

I said it.

Anyone still here?

Yes, I am ashamed to admit it, but it's true. I am NOT the best homekeeper, but I am learning y'all. :)

Let me make it clear, however, that I DO vacuum in the bedroom- twice a week, in fact. I just don't move the very heavy furniture. I move furniture in other areas of the house that is easy for me to move, but our bedroom has been overlooked by me.

Anyway, there was quite a bit of dust under there and the thought of those dust mites MADE MY SKIN CRAWL!!!!!!!!!!!! So, I want to issue a challenge to everyone, PLEASE PLEASE PLEASE move each piece of furniture in your home and vacuum underneath all of them within the next month. What do you think? Can you do that? Most of y'all probably move all of your funiture monthly, but there are probably a few who, like me, have very heavy furniture in spots and those particular spots have been long forgotten by the vacuum cleaner.

Anyone with me on this?

Let's get those nasty dust mites OUT OF OUR HOMES!!!!!!!!!!!!

Salad with Apple and Red Onion...

Okay, I'll admit it. I sometimes feed my family frozen pizza. Sigh. Surely I'm not the only one?

Well, at least I did give them a yummy salad to go along with it, right? Doesn't that count for something? HA!!!

Salad with Apple and Red Onion

1 head of lettuce of choice (we prefer romaine)
2 small apples of your choice, quartered, cored, and sliced
1/4 small red onion, thinly sliced
1/4 cup olive oil
1 1/2 tablespoons apple cider vinegar
1 teaspoon whole grain mustard
1 tablespoon honey
Coarse salt and black pepper

Place lettuce, apple, and onion in a salad bowl. Place oil, vinegar, mustard and honey in a small plastic container and fit lid on container. Shake dressing to combine, 1 minute. Pour dressing over salad, toss, and season with salt and pepper, to taste.

Back into a normal routine...

Now that the Christmas holidays and New Year are over, it's time to get back into a normal routine around here. I'm sure many of y'all feel the same way, too. All the decorations are being put to rest for another year and the home is getting back into its "non-Christmas" look.

While I LOVE having those sweet little white lights on the tree, I also love having a neat and tidy home MINUS the pine needles (yes, a major negative in having a real Christmas tree).

So, today will be back to my regular cleaning routine for Monday- washing Mr. U's and my clothes and cleaning our bathroom. I also found today that our back porch is in dire need of a thorough sweeping! We've had a good bit of rain the past few days and it shows!!! :)

I love special holidays, but I also love the joy that comes from the simplicity of the "same old same old" of everyday living.

Blessings to each of you as you serve your family this year!!

Happy New Year!!! Let's get our hearts right FIRST thing!!!

Happy New Year!!

Before you begin all your new commitments or resolutions, how is your heart? How is your First Love? How is your relationship with the Lord?

Please read the following from Revive Our Hearts and ask the Lord to show you anything in your life that is not pleasing to Him. I can think of nothing better than to start a new year with a fresh relationship with the Lord of all Creation!!!

40 Evidences That You May Have Left Your First Love

1. You can go hours or days without having more than a passing thought of Him.
2. You don’t have a strong desire to spend time with Him.
3. You don’t have a strong hunger for the Word; Bible reading is a “chore” – something to mark off your “to do” list.
4. Spending time in prayer is a burden/duty rather than a delight.
5. Your worship is formal, dry, lifeless, merely going through the motions.
6. Private prayer and worship are almost non-existent . . . cold and dry.
7. You are more concerned about physical health, well-being, and comfort than about the wellbeing and condition of your soul.
8. You crave physical food, while having little appetite for spiritual food.
9. You crave human companionship more than a relationship with Christ.
10. You spend more time and effort on your physical appearance than on cultivating inner spiritual beauty to please Christ.
11. Your heart toward Christ is cold and indifferent; not tender as it once was, not easily moved by the Word, talk of spiritual things, etc.
12. Christianity is more of a checklist than a relationship with Christ.
13. You measure spirituality (yours/others’) by performance rather than the condition of the heart.
14. Christianity is defined more what by what you “do” than who you “are” (“doing” vs. “being”).
15. Your obedience and service are motivated and fueled by expectations of others or a desire to impress others, more than by passion for Christ.
16. You are more concerned about what others think and pleasing them, than about what God knows and pleasing Christ.
17. Your service for Christ and others is motivated by a sense of duty or obligation.
18. You find yourself becoming resentful over the hardships and demands of serving Christ and others.
19. You can talk with others about kids, marriage, weather, and the news, but struggle to talk about the Lord and spiritual matters.
20. You have a hard time coming up with something fresh to share in a testimony service at church or when someone asks, “What’s God been doing in your life?”
21. You are formal, rigid, and up-tight about spiritual things, rather than joyful and winsome.
22. You are critical or harsh toward those who are doctrinally off-base or living in sin.
23. You enjoy secular songs, movies, and books more than songs or reading material that point you to Christ.
24. You prefer the company of people who don’t love Christ, to the company and fellowship of those who do.
25. You are more interested in recreation, entertainment, and having “fun” than in cultivating intimacy with Christ through worship, prayer, the Word, and Christian fellowship.
26. You display attitudes or are involved in activities that you know are contrary to Scripture, but you continue in them anyway.
27. You justify “small” areas of disobedience or compromise.
28. You have been drawn back into sin habits that you put off when you were a young believer.
29. “Little” things that used to disturb your conscience, no longer do.
30. You are slow to respond to conviction over sin – or you ignore it altogether.
31. You enjoy certain sins and want to hang onto them. You are unwilling to give them up for Christ.
32. You are not grieved by sin – it’s no big deal to you.
33. You are consistently allured by certain sins.
34. You are self-righteous--more concerned about sin in others’ lives than in your own.
35. You are more concerned about having the right position than the right disposition.
36. You tend to hold tightly to money and things, rather than being quick to give to meet the needs of others.
37. You rarely give sacrificially to the Lord’s work.
38. You rarely have a desire or burden to give, when you hear of legitimate financial needs within the Body, your church, or a ministry.
39. Accumulating and maintaining material “things” consumes more time and effort on your part than seeking after and cultivating spiritual riches.
40. You have broken relationships with other believers that you are unwilling or have not attempted to reconcile.

Meal planning help...

My dear in-real-life friend, Melissa, is a newlywed and in need of weekly meal planning help. If any of you dear ladies have time, would you mind visiting with her on her blog and helping her out?

I told her that I am no help with weekly menus because I do things differently. I grocery shop twice a month after Mr. U gets paid. Yesterday was one of my grocery shopping days. I LOVE having a houseful of groceries, knowing that I will be able to make meals for my family.

Before I grocery shop, I always make a menu. After I make the menu, I make a list of every single thing I will need for the each recipe. I then head to my pantry, refrigerator and freezer to see what ingredients I already have on hand. I will then mark off the ingredients I do not need to purchase on that shopping trip.

Also, whenever I run out of something, I will quickly put it on my grocery list for the next shopping trip. For example, we just ran out of Vitamin E today. I wrote it down on my grocery list for the next shopping trip (in about 2 weeks). There are some items that cannot wait for the next shopping trip (toilet paper, milk, etc.) but if something can wait, then wait it will. :)

This is what our menu looks like for the next two weeks:
-Chicken sate over pasta with salad
-Picnic Chicken with couscous and green beans
-New Year's Pasta with French bread and creme brulee
-Pancakes and Bacon (breakfast for supper!! FUN!)
-Pumpkin Sausage Pasta with salad
-Meatloaf, mashed potatoes and green beans
-Italian Wedding Soup with some kind of bread
-Grilled Lemon Chicken and roasted broccoli
-Grilled burgers with carmelized onions and roasted tomatoes
-Pizza and salad
-2 days we will eat out (on Saturdays)
-each Monday we have lunch with some friends that have all adopted or are going to adopt

So, there's 14 days of meals!! Yesterday we had pizza and today we are having chicken sate. So, I will cross those off my menu so that I know that I have already used those ingredients.

I do not assign certain meals to certain days. It has never worked for me that way. Also, I decide the night before what we will have the next day. If any meat needs to thaw, I will take it out of the freezer and put it in the refrigerator the night before.

If we find out we will have people over to eat, I will make extra bread, make more salad or green beans and make sure to serve dessert.

This is what works for me and for our family. Often, Mr. U or Joshua will ask for a certain meal that we haven't had in a while or one that they particularly like and I try to make sure that I make it. I love cooking for my family and making sure that they all enjoy what they eat and that it is relatively healthy (notice, I said "relatively" HA!! Homemade IS healthier than eating in a restaurant or eating a frozen meal, though, isn't it?).

So, y'all please share with Melissa how you handle weekly menus. As a new bride, I am sure she will appreciate any and all advice!!

(Yes, the picture is Melissa. The picture is a tad bit overexposed on purpose- to really bring out her pretty blue eyes!! What a lovely bride she was!!)

Free knitting lessons!!

Gotcha with the title of the blog post, right? I'll bet you are reading along here thinking "Wow! Mrs. U is going to teach us how to knit!!" Nothing could be further from the truth!!!

The truth? Well, the truth is that I just cannot knit. I can crochet, sure, but knitting? Well, that is a different story. But I am DETERMINED to learn to knit. So where do these "Free knitting lessons" come from? Why, YouTube, of course!!!

I knew there tons of videos on YouTube, but I had NO idea that I could receive knitting lessons, too!! What fun!!

So, if you start wondering what I'm doing, I'm over at YouTube, watching knitting videos and hoping that I can "get" knitting. It is SO pretty!!! (Check out Tammy's knitting over at her blog for BEAUTIFUL knitting!!!)

Thank you to Please Don't Call Me For Advice for the YouTube tip!!!

Christmas dress...

Here it is after Christmas and I almost forgot to share a picture of Elizabeth in her Christmas dress!! I LOVE this dress- red and festive!

(And no, I did NOT get her to pose like that. She was in the middle of turning her back to me and I snapped it super quick and got this cute shot!! The photo right after this one? The back of her head.)

Happy day after Christmas!!!

I hope all of you had a very Merry Christmas yesterday!! I trust that everyone got to spend at least a little time with family or friends or both!!

I also hope that we do not leave the Truth about Christmas behind until next December 25. Christmas is not simply just a day- Christmas is an attitude of the heart.

What is Christmas to you? Is it just about gifts and Santa and food? Or is it about Jesus Christ, Emmanuel, God with us? Having a Christmas kind of heart is about remembering daily how God sent His only Son to earth as a baby, how He grew up living a sinless life, and how He laid down His life and died on a cross in YOUR place. And, happily, how He rose from the grave three days later so that YOU could have FORGIVENESS of YOUR sins!!

For those of you that are born again Christians, is this how YOU live? Truly, are you more focused on The Baby in the manger or how many returns you need to make today? Are you more focused on growing in His image, being holy because He is holy, dying to yourself, or are you more focused on how much "stuff" you received on your Christmas list? Be honest.

For those of you who are not Christians, may I challenge you to read the Bible? Start in John (one of my favorite books!!) and just read. Look for Christians in your life and start asking them questions about the Word. Maybe you could even visit church and talk with the pastor about what it is exactly that being a Christian is all about. And what exactly is this "sin" that you seem to have and why do you need forgiveness? :)

I pray that everyone has a blessed weekend. Jesus truly IS the Reason for the Season

Christmas Meme...

I saw this fun Christmas Meme over at Charree's blog, Held in His Hand. Let's play!!

~Christmas Faves~

Fresh tree or fake tree?
Definitely FRESH!! I love the smell of a fresh Christmas tree!!

Ornament?
Definitely this one. Mr. U and I got married December 12, 1998 (Yep! We just celebrate our 10th anniversary!!!) and we received MANY Christmas type gifts. This ornament, though, was (and still is!) my favorite!! Each Christmas as we decorate our tree, we always hang this last AND we hang it together!!!

Christmas song?
My favorite Christmas hymn is "What Child is This?" My favorite Christmas non-hymn song is "Joseph's Song" by Michael Card.

Tradition?
Each year when we decorate our Christmas tree, we eat Cranberry Chicken. We also watch "The Nativity Story" and drink eggnog. Yum!!!!!

Favorite gift as a child?
Well, I don't remember actually receiving him (I was too young) but I DO know that I got my Teddy for Christmas- my first Christmas to be exact!! I still have my dear Teddy, so he's definitely my favorite Christmas gift!!!

Christmas meal?
Well, it's a toss up between Cranberry Chicken and the Christmas Day meal at my parents' house.

Cookie?
Cookie? As in SINGULAR?? I have to choose ONE????? YIKES!!! Okay... wait... this is my blog, so I can choose more than one, right???? I choose Gingerbread Men, Extra Spicy Gingersnaps and Cranberry Orange Cookies. OH MY!!!

Place to be?
With my family. :)

Memory?
Playing games with my family on Christmas Day after all the gifts were opened and all the food was eaten.

Christmas movie?
The Nativity Story and It's a Wonderful Life.

Pancakes for Supper...

Pancakes

4 cups all purpose flour
4 T sugar
8 tsp baking powder
1 tsp salt
4 eggs, beaten
4 cups milk
8 T cooking oil (I use light olive oil)

Combine all ingredients until combined. Onto your hot, lightly greased griddle, pour about 1/3 cup of batter. Cook about 2 minutes on each side until golden brown.

This recipe makes a lot of pancakes. We make extra and freeze them.

Homemade Syrup

3 cups sugar
1 1/2 cups water
2 T molasses
2 t butter flavoring
1 t maple flavoring
1 t vanilla flavoring

Combine all ingredients EXCEPT vanilla in a sauce pan. Bring ingredients to a rolling boil, remove from heat and cool completely. Once cooled, stir in vanilla.

My family prefers this syrup over any store-bought syrup.

French Breakfast Puffs...

Oh y'all!! We had these for breakfast Saturday morning and they were DELICIOUS!!

I got the recipe from Pioneer Woman. She said they make 12 muffins, but I made 18 of them. You can click on the link to PWs French Breakfast Puffs to see her exact recipe. Below it is written with a few changes I made.

French Breakfast Puffs

3 cups all purpose flour
3 teaspoons baking powder
1 teaspoon salt
1/2 teaspoon ground nutmeg
1 cup sugar
2/3 cup shortening (Crisco)
2 eggs
1 cup milk
2 cups sugar
4 teaspoons cinnamon
1/4 teaspoon nutmeg
2 sticks butter

Preheat oven to 350 degrees. Lightly grease 18 muffin cups. Stir together flour, baking powder, salt, and nutmeg. Set aside. In a different bowl, cream together 1 cup sugar and shortening, then add eggs and mix. Add flour mixture and milk alternately to creamed mixture, beating well after each addition. Fill prepared muffin cups 1/2 full. Bake at 350 for 20-25 minutes or until golden. In a bowl, melt 2 sticks butter. In a separate bowl combine remaining sugar and cinnamon. Dip baked muffins in butter, coating thoroughly, then coat with cinnamon-sugar mixture.

We found that these tasted BETTER after they had cooled for about an hour.

I am sure y'all will enjoy them, too! Happy eating!!

Thank you, but....

I truly want to thank all of you VERY kind and thoughtful fellow bloggers who think enough of my little blog to give me a blogging award!! Y'all are FAR TOO KIND!!!!! Unfortunately, though, I cannot accept them. Truly, if there is anything good or encouraging about my blog, it isn't because of me- it is only because of the Lord Jesus Christ!!!

So for anyone that has given me an award lately and you haven't heard me from, this is why. I cannot accept something which I did not earn.

All awards can be directly given to Him who is able to do far more abundantly beyond all that we ask or think. (Ephesians 3:20)

Blessings, y'all!!!

Oven Roasted.... Applesauce???

Elizabeth's FAVORITE food is apples. Specifically RED apples (yes, she actually tells me that). We had a ton of apples that some friends brought us back from a trip to North Carolina. So, what did we do? Make applesauce, of course!!

Now, I've made applesauce before and it's always been good. Each time I peel, core and chop them and then boil them until tender. Then, I'll mash them up and add all the normal applesauce seasonings. Always YUM is the result.

This time, though, I was wondering if you could roast the apples in the oven first. A quick visit to Google led me to Well Fed. I followed the recipe...almost.

Oven Roasted Applesauce

8 good sized RED apples (for Elizabeth, you know)
1/4 cup apple cider
6 tablespoons light brown sugar
1 T lemon juice (yes, the stuff in the bottle)
1/2 teaspoon cinnamon
1/8 teaspoon freshly grated nutmeg
pinch of Kosher salt

Peel, core and chop all apples and place them in a 9x13 pan. In a separate bowl, mix all other ingredients well. Pour over apples and toss to coat. Bake in a 425 degree oven for 35 to 40 minutes until apples are very tender. Let cool 10 minutes and then start mashing them for chunky applesauce or process them in the blender, food processor or with a stick blender until desired consistency is reached.

WARNING: This is REALLY REALLY delicious and will NOT last long in your home!!!!!

(Sorry, no pics of this. We ate it very quickly!! YUM!!!)

Help! I cooked too much Mac and Cheese!!!

Dear blogging friends,

HELP!!! I made a very delicious macaroni and cheese today, but it made TOO much! Do any of y'all know if I can freeze this? And does it reheat well, if so??

I use the recipe for Homemade Mac and Cheese from Allrecipes, but, of course, I changed it up a bit. Instead of cheddar and parmesan cheeses, I used extra sharp cheddar, mozzarella and Swiss cheese!! I also added a couple of sprinkles of dry mustard, a pinch of salt and some white pepper, too. OH MY!! It is very tasty!!

Now, PLEASE, is there any hope? Will I have to throw it away and lose it??

His,
Mrs. U

Kettle Corn...

I have been a huge fan of the Hillbilly Housewife for years. I link to the recipes on that site because they are tasty, easy and budget friendly.

Sunday night, I made the Kettle Corn recipe. OH MY STARS!! This tasted JUST like Fiddle Faddle! SO VERY GOOD!!! I will definitely make this again!!

Kettle Corn

1/3 cup corn oil
1/2 cup sugar
1/2 cup popcorn kernels
Salt to taste

Over a medium-high flame, heat the corn oil in the bottom of a heavy 3-quart saucepan. Sprinkle in 2 or 3 popcorn kernels. When the kernels pop add the sugar, and then the remaining popcorn. Cover with a good lid. Shake the pan over the heat while the popcorn pops. When the popping stops, remove the pan from the heat. Immediately pour the hot popcorn into a bowl. Try to remove any oldmaids with a spoon or fork. The popcorn will be hot and sticky so be very careful not to burn yourself. The popcorn should be lightly coated with a beautiful amber caramel. Salt the kettle corn to taste and serve to thankful recipients. Makes a large bowlful. Tastes best late at night while watching a scary movie with friends and family.

Also, it is VERY hot when it is first finished. When you pour it into a bowl, let it sit for about 5 minutes before touching it. Then give it a really good stir to let all the kernels on the bottom cool. Cool completely before eating.

I need some SERIOUS blogging help...

If anyone is hoping for a sweet, encouraging blog post, stop reading here. This is simply a post of me ranting and needing HELP!!! :)

Once again, I am having troubles with Photobucket. I upload the photos from my computer to Photobucket and then transfer them to my blog. But for the past month or so, when I take the photos from Photobucket to my blog, they are SUPER DUPER HUGE!!!!!!!!!!!!! WHY?????? And, unless I resize them to teensy tinsy, they will NOT fit on my blog posts (they will be too wide and HUGE!)!!!!!!

Grrrrr......

And I've tried Flickr, as well. But I have YET to get a photo to upload with them. Each time Flickr has the message that it didn't upload and to try again. Ridiculous.

This is seriously getting on my nerves. I would LOVE to be able to share things here on my blog, but I can NOT figure out how to get the photos loaded properly.

Does anyone have any kind of suggestion???

A Ruby Rebel

rubyrebel

Oh ladies!! I just read about being a Ruby Rebel and I had to share it with you!!

Here's some of what Kelly has to say about it...

Another thing about rare jewels...jewels are rare because there are not in abundance, but also because they have to be "hewn out" of the rock around them. They have to be chipped out, polished, chiseled on and perfected. You don't just stumble upon a ruby that is perfectly formed and sparkling. It must endure some work.
So what kind of wife are you? Do you desire to be a rare jewel? I know I do! I want my marriage to be quite uncommon from the world's view of marriage. I want to follow the Lord Jesus Christ in all things and that includes in the area of being a wife and living that out according to Scripture.

Have I arrived? Nope. Do I mess up? Daily. Wait. No. Make that hourly. But I still desire for the Lord to polish and chisel me into His image- not the world's image.

So ladies, are YOU a Ruby Rebel? If so, how do you daily live out the Scriptural commands for a wife?

Have you always loved to and wanted to stay at home?

In the comments of the post "Staying Home is Not a Waste of Time if You Don't Waste it", this question was asked by Exhausted SAH Mom...

I just have to ask whether the owner of this site and those who post here have always felt this love toward staying home and homemaking.

I have to admit that this was not what I had planned for my life and I do not always deal well with it.

Where I live, people do not drop by, ever. It's hard to get someone to come over by invitation. Everyone is so busy that they have no time, even within the Christian homeschool group I am in.

I would love to find someone to talk to. I need to move from being here because I have to be (long story) to where I am at least content with being here at home.

Dear wife and mother!! If there were a way for me to come and sit down with you and talk for a while, I definitely would!! I am definitely sending (((((hugs))))) your way as I am writing this.

My entire life, all I ever wanted to be was a wife, mother and teacher- a homemaker. Marrying my husband and adopting his children made me an instant wife and mother!! Then the Lord led us to homeschool and I was a teacher! The Lord definitely blessed me!!

The main reason that I wanted to be a homemaker was because I grew up watching my mother as a homemaker. If you were to sit down with her today and ask her what she did to become such a wonderful homemaker, she would probably laugh and say that she was far from that description. I saw differently, however. I saw a lady that loved her husband and loved her children. I saw a lady that chose to be with us instead of doing her own thing. She chose to serve our family and she had JOY when she did it!! When the Lord saved me when I was in college, He gave me an ever stronger desire to love and nuture my future family. Today, I am blessed to be able to do just that.

You mentioned that no one drops by and that you have no one to talk to. Please know that what I am saying is NOT meant to be cruel, but are you approachable? What does the countenance on your face look like to others? Do you look unhappy? If the answer to any of these is yes, may I suggest that you put on a friendly face the next time you are headed to your Christian homeschool group? Perhaps that would help draw new friends to you (or I could be FAR off.. .if so, please forgive me.).

You also mentioned that staying home is not something that you always planned for your life, that you don't always deal with it well, and that you "have" to be home. It seems as if you see yourself as "stuck" in this situation. If you are a Christian, please pray and ask the Lord to help change your attitude in this area. You are only as "stuck" as you decide to be. The Lord has given you children and He has you at home for His glory- not for your happiness. BUT when you pour your heart out to the Lord and lean on His understanding, He will make His desires YOUR desires as well!! His ways and His thoughts are SO much higher than ours!

Again, dear friend, I could be SO far off with my words here. I do wish I knew more of your situation. But what I DO know is that the Lord knows all about it. I definitely pray that He will give you wisdom and peace in this area.

Dear readers, please feel free to share advice and wisdom with this mother. Perhaps some of you have been in a similar situation? Perhaps some of you have friends or family that the Lord has given them joy to be at home? Please share as the Lord gives His you wisdom about this.

Children are a blessing... at least, God says they are...

"Just one night a month, I have to get away from my kid. I don't care if other kids are there at the get-together or not. I don't have to take care of other kids. I just have to get away from my kid one night a month."

No, this is NOT a made up quote. I actually heard this out of the mouth of a new mother today. Her sweet baby girl is only 3 months old and already she just has to get away from her.

Am I the only one that has a problem with this? Does anyone else see this as selfish??? If children are truly a gift from the Lord (and He says they are in Psalm 127:3), then why do so many mothers today get tired of that gift?

It just broke my heart this afternoon to hear this. Just yesterday, Joshua was 10 years old and he will be 21 next month. Just yesterday, Elizabeth was a tiny little 9 1/2 month old who could do nothing for herself and today she is 2 1/2 and thinks she can do EVERYTHING all on her own. Children are young only once and only for such a short period of time. Mothers, do not let that time slip by. Surely you can set yourself and your desires to the side for a few years.

New mothers- Yes, it can be very hard adjusting to life with a new little one. May I encourage you to find a godly, older mother who has already raised a few children? Seek her out and ask her advice. Share your heart with her. Cry if you need to. She will understand and help you put things into perspective and she'll be able to give you invaluable advice.

Older mothers- Please be aware of the new mothers around you. Just because your children aren't babies anymore, it doesn't mean that you are finished with that age. The Lord has given you wisdom to share with the new mothers. Wisdom that only time and experience can teach. The new mothers might not want new advice at first, but stick around- they will be SO happy that you are close by for advice and help!!!
