Roasted tomatoes with basil...
These roasted tomatoes were tasty beyond belief!! I promise you, I could have eaten the entire pan of them all by myself!!!
Roasted Tomatoes
12 plum tomatoes, halved lengthwise, cores and seeds removed
1/4 cup good olive oil
1 1/2 tablespoons aged balsamic vinegar
2 large garlic cloves, minced
2 teaspoons sugar
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
10 large fresh basil leaves, julienned
Preheat the oven to 450 degrees F.
Arrange the tomatoes on a sheet pan, cut sides up, in a single layer. Drizzle with olive oil and balsamic vinegar. Sprinkle the garlic, sugar, salt, and pepper. Roast for 25 to 30 minutes, until the tomatoes start to carmelize adn the flavors are concentrated. Sprinkle basil on top and serve warm or at room temperature.

These sound good. I have made something similar in the past and I put mozzarella cheese on them :)

Yummy, yum, yum! Take heart ~ even if you DID eat the whole pan of it at least it isn't a very high calorie dish!!!! This is another "must" try for me:) BTW, you always have such good recipes, do you have any good ones for mushrooms (one of my fav. veggies.)?
That looks so gooood! I wish I could fix stuff like this, but sadly, I'd be the only one here to eat it. :(
I'll just lick the computer screen....that will help me to not want any.....

I had some balsamic vinegar for Christmas- may just try this recipe out when basil is on offer - I cannot seem to grow it myself although I keep trying!

Hey that is pretty close to my roasted tomatoe recipe. Isn't it just he best? I roast pans in the summer and freeze. YUM.

These are so good! I don't like tomatoes other than in spaghetti sauce & ketchup but these are so fantastic I absolutely could eat the whole pan! Oh my goodness! Try them!
