What to do with an eggplant??
A sweet lady has given us an eggplant. I've had eggplant parmesan before but I've never eaten it any other way. Would y'all mind sharing your favorite eggplant recipes?? I would DEFINITELY appreciate it!!!
I tried an eggplant soup once thatw as horrible... I like eggplant parmesan though. You can also bread aggplant slices in a cracker crumb mixture and fry until golden brown on each side. That's yummy.Dip slices in beaten egg and milk then in cracker crumbs.
You need to make ratatouille! (rat-a-TOO-ee). Let me go scour my recipe files. Or you can go to allrecipes.com and I'm sure they'll have something. It's a vegetarian dish, so if your DH doesn't go veg, you'll have to provide some meat for him! :)
Hi Mrs. U! I love your blog- got to it from RQ. Anyway, I love eggplant diced and sauteed in olive oil with diced fresh tomatoes, onions, garlic, red bell peppers and a little bit of fresh basil. Very yummy and pretty too. In Him, Elissa
The best way to have eggplant is in a lasagne - just the same as a usual meat lasagne but use egg plant and a little salt on them thinly slice instead of mince meat....enjoy

I enjoy eggplant fried, but here's a 'healtier' recipe:
1 eggplant, sliced thin
1 red bell pepper, sliced in chunchs
1 green bell pepper, sliced in chuncks
1 onion, sliced
S & P to taste
Olive oil
Place veggies in a large baking dish. Drizzle with olive oil. Bake at 350 degrees for 20 minutes, basting every few minutes w/olive oil.
