Peanut Butter Chocolate Chip Muffins



I LOVE having quick breakfasts ready for my family.  A nice stash of homemade biscuits, pancakes, muffins, all make quick and tasty breakfast choices for a busy family.

This is just one of the many muffins I like to have frozen in the freezer so we can quickly warm it up in the morning before we start school (and often the girls like them for snacks, too!!!).

Chocolate and peanut butter? YUM!! For breakfast? Even better!!!


Peanut Butter Chocolate Chip Muffins
1 ¾ cups all purpose flour
2/3 cup packed brown sugar
2 ½ teaspoons baking powder
¼ teaspoon salt
1 egg
¾ cup milk
2/3 cup peanut butter
¼ cup oil
1 ½ teaspoons vanilla
2/3 cup chocolate chips

Mix all together and bake at 350 degrees for 15 to 18 minutes. Makes 12 regular sized muffins.

ooo I was given your site from a friend and fellow adoptor... I just love to come here and follow with you. I haven't tried any of your recipes yet but this one.

It sounded so good I just had to try it. I didn't have any chocolate chips and made then without.. I also used whole wheat flour and instead of veg oil I used peanut oil as I had that on hand to it just added to the peanut butter flavor wasn was GREAT!!!!

I made these last week. I used half whole wheat flour/half white flour, and I used half brown sugar/half Splenda. They were DE-LISH! My husband (the diabetic!) LOVED them. Sooooo yummy. Thanks for sharing!

Just copied your recipe to my file! Can't wait to give them a try, they sound fab! BTW, did you know that the "aluminum free baking powder" does not have a bitter taste? Ina taught me that one :)

Hubby loves peanut butter cups so I am sure these would be a hit with him! I think I will make a double batch on Monday and send them into work on Valentine's Day for him to share. I have some peanut butter chips do you think a few of those mixed with the chocolate chips would be good? Wasn't sure it that would be too much peanut better.
