A couple of weeks ago, I discovered that I had two really large blocks of mozzarella cheese in the refrigerator. I had bought the second block thinking that I didn't have any more cheese. I'm sure y'all have done similar things before, right?
I didn't want the cheese to go bad, but I didn't need to use it all right then. Thankfully, I remembered that a friend told me she had, at one time, shredded her cheese and frozen it all in freezer bags. Well, I decided to try it out for myself.
I grated my cheese with my trusty box grater and put it all in a freezer bag. I made sure all the air was out of the bag and zipped it up. I made sure that the bag was lying flat when I put it in the freezer. It was quick and easy and I was hoping and praying that when the time came for me to use the cheese, it wouldn't be one huge lump of shredded mozzarella!!!!
Well, I pulled it out yesterday and it was PERFECT!!!! The individual pieces of cheese did NOT stick together!! I was quite happy with the results and will most definitely be doing this again!!!
What did I need to use the shredded mozzarella for yesterday? Why, quick "pizza" for Elizabeth and me, of course!!!

I am going to do that. It's a grate( haha) money saving idea too. Much of the time chredded cheese is more expensive that a block. AND!!!....fresh shredded cheese is always tastiest!!!!!

Mrs. U I purchase cheese in large quanities all the time and freeze it. I have never had any problems with it. Only problem is my hubby doesn't like me to serve frozen cheese when we are having baked potatoes, he prefers when i take it out long enough to thaw. :D
Sure makes it a good deal when you find cheese on sale---oh I also put sliced cheese for sandwiches also in the freezer.

I freeze cheese too! It is always cheaper to buy in a block rather than the already shredded in a bag. I use my food processor to shred it and freeze it for later... cheddar AND mozzarella! YUM!

It is amazing, as a dairy producer, I do this all the time, and thought everybody did it. But I am glad you found out and can pass it along to others.
I have not been to your site in a long time-we are now home from Taiwan withour little boy, and maybe I can pop in more frequently.

Hey, I do that, too. :-D That is the only way I can do it. I can't use a whole 5 lb. block in a reasonable time... :-D
I know that this is an older post, but do you lay out your cheese in a single layer to get solid in the freezer before you put in a freezer bag? Is it vac packable? Thank you!

Good question!! I put the cheese in the bag, make sure there is no air in there and then zip it up. Then I'll lay the bag flat and try to get the cheese into an even layer. (Hmmmm... not sure if that makes any sense.) If I don't lay it in a flat, even layer, then it can easily freeze in a ball and I won't be able to get any cheese out of the bag! LOL!!
