
I make muffins quite often. They are the perfect "fast food" for mornings. I've been making different muffin recipes for years and each time I've used a spoon to get the muffin mixture into the muffin tin. A mess would ALWAYS occur and I'd always try my best to get all the little spills cleaned off the edges of the pan. What a pain.
But recently, I heard Ina Garten recommend using a regular ice cream scoop to, well, scoop the muffin mixture into the individual tins.

Aside from the fact that I have heard her mention this MANY times before and I COMPLETELY ignored her, you know what? It worked!! And it worked PERFECTLY, too, I must add!! All the muffins are incredibly close to being the same size! And it was MUCH quicker than trying to spoon it all in!!
I should have listened sooner!!!

This is one of my favorite tricks!
I use different sized scoops for different things - I have 2 small ones, so muffins are usually 2 scoops.
But I also use this trick for uniformly shaped pancakes, cupcakes, meatballs, cookies, and baby food blobs on wax paper to be frozen and then thawed as needed!

Try spraying the scoop lightly with pam or any oil spray and the mix will slide out quicker without leaving behind too much mix as well.
I usually don't use a scoop, but I usually use a 1/4 cup measuring cup sprayed lightly with oil. But I think the roundedness of the ice cream scoop is a better tip.
I like Ina too. My daughter says she looks like me. LOL Wish I had her show!

Oh, yes, I do this all the time! I use my large Pampered Chef scoop, though, and overfill it slightly since I like a big, fluffy muffin/cupcake. Works perfectly every single time! :o)

Oh yes, I've been doing this for years...to make cookies, too! So easy and they all look perfect..just like Ina's! :)
It works great! I too use a Pampered Chef large scoop. I think it's a size 20 scoop, meaning 20 scoops to a quart. Try it to make evenly sized pancakes too. I'm always making a mess of waffle batter too. Scoop up waffle batter to make *clean* and short work of it.
