Vidalia Onions...

It's that time of the year- VIDALIA ONIONS ARE HERE!!! I LOVE these sweet onions sooo much! Mr. U and our son BOTH bought me 10 pounds of Vidalia's... so I now have 20 POUNDS of Vidalia onions in my kitchen. WOOHOO!! What can I make? What can I make?

Soo... today we will be having Vidalia Onion Pie. Yummmm... Here's the recipe...

Vidalia Onion Pie
3 medium Vidalia Sweet Onions
1/2 cup butter
3 eggs, lightly beaten
1 cup sour cream
1/4 teaspoon salt
1/2 teaspoon pepper
1/4 teaspoon cayenne red pepper
1 9-inch pie shell, unbaked
1/2 cup grated Parmesan cheese

Preheat oven to 450 F. Thinly slice onions. Saute onions in butter until soft and transparent. Combine eggs, sour cream, salt, pepper and cayenne red pepper until smooth. Pour onions into pie shell, then pour egg mixture over onions. Sprinkle with cheese.

Bake at 450 F. for 15 minutes, then lower oven to 325 F. and bake for an additional 15-20 minutes or until lightly browned and set. Serve warm.

This sounds like a yummy recipe! There's a cute little children's book about Vidalia onions written by a lady from Vidalia, Georgia. I'll have to find the title for you; I think Elizabeth would like it. :)

I have never heard of an onion pie. Hmmm... I don't know if I would like it or not. I've just recently liked cooked onions but I think my husband would really like it. I'll be copying this down so I can make it for him when he gets home. Thanks for sharing.

I've always been intrigued by the idea of an ONION pie. My husband and I really enjoy onions in general. What do you serve this onion pie with? Is it very runny and juicey or really thick?

This looks really good! My mom used to make an onion casserole that was a family favorite. It had cheese and then crushed potato chips on top.

You know, I guess you do have to be an onion fan to like this pie!! LOL!! All of us in the U family are BIG onion fans!!!

Trixie, you could serve this pie with a big salad or steamed broccoli. We had it with green beans. A nice fruity dessert would be wonderful, too!!

Oh, and the eggs in it thicken it up. The recipe says to serve it "warm" so I let it sit for a few minutes before serving.

This pie is delicious! I wasn't entirely sure whether I'd like it or not but if was wonderful and the rest of the family liked it too. I will definitely be making this again.

I served mine with fresh garden peas and then because I had a 2 pie crusts I made a lemon meringue pie for dessert. A perfect summer meal.
