Help! I cooked too much Mac and Cheese!!!

Dear blogging friends,

HELP!!! I made a very delicious macaroni and cheese today, but it made TOO much! Do any of y'all know if I can freeze this? And does it reheat well, if so??

I use the recipe for Homemade Mac and Cheese from Allrecipes, but, of course, I changed it up a bit. Instead of cheddar and parmesan cheeses, I used extra sharp cheddar, mozzarella and Swiss cheese!! I also added a couple of sprinkles of dry mustard, a pinch of salt and some white pepper, too. OH MY!! It is very tasty!!

Now, PLEASE, is there any hope? Will I have to throw it away and lose it??

I've never tried freezing pasta, but I've heard it turns out mushy. Do you know anyone who is sick, or pregnant, or has a new baby, or could just use a break? You could take them some.

I've heard the same thing about pasta not freezing well but if you don't have anyone else to bless with your abundance, then I'd try and freeze it. Really you don't have anything to lose by trying. (o:

I was afraid y'all would say it might get mushy!

Sadly, most of the people we know are going out of town for the holiday.

And you know, Mrs. B, you are right! If I'm just going to end up throwing it out, I might as well freeze it and then blog the results, huh? HAHA! :)

I make mac & cheese and freeze it successfully. However, I usually freeze it before the final bake. (Step 4 in your recipe.)

Casseroles with cooked pasta in them freeze just fine; just freeze before you bake the casserole and when you are ready to use the casserole, simply thaw overnight in the refrigerator.

Ooh!! Carina! So I can make this same recipe as before and just make 2 smaller pans of it and freeze the unbaked one? PERFECT!!!!!

I've frozen a pasta casserole with good results before.

I know how you are about left-overs....but at least put some of it in the refrigerator for tomorrow :D

My logic would be that they sell frozen TV dinners with mac and cheese - so it's likely to work. Let us know how it turns out.

I have frozen this with success!

Just thaw completely and warm gently with extra milk!

Hello Mrs U,

I've succesfully frozen homemade mac and cheese. When I reheat it I add a little milk to give it a good consistancy.

Your recipe sounds really yummy!

You could always add some tuna, onion, celery ... and turn it into cheesy tuna salad. Or tuna & cream of mushroom soup for tuna noodle casserole. Or add some ground beef, tomatoes, onions ... for goulash. :o)

I did some freezer meals last weekend and made homemade macaroni and cheese and froze it into three 8 x 8 pans. The macaroni was cooked al dente and froze beautifully with the cream sauce. It can be done prior to baking as others have stated.

It might make a decent soup. Mix it up with some chicken and broth, maybe some peas and carrots, for a sort of cheesy chicken noodle soup? Or turkey, to use Thanksgiving leftovers?

just put it in the fridge and warm it up with some water or milk, raw milk of course, eat on it for a couple of days as a side dish.

just out of curiosity sakes, exactly how much extra could you have possibly made? I mean it just doesn't figure. You know how big your family is, so i'm just curious thats all.
