I've REALLY been on a pumpkin kick this week. So much so that when my sister suggested that I add pumpkin puree to my oatmeal, I did it!! The result? AWESOME tasting oatmeal!! Not only did it taste great, but just THINK of all that fiber- not only from the oats, but there's a whopping 5 grams of fiber in only 1/2 cup of pumpkin!!! This is definitely a GREAT way to start the day!!!
Pumpkin Oatmeal
1/2 cup old fashioned oats
1 1/4 cups water
2 T brown sugar
1/2 cup pumpkin puree
pumpkin pie spice
Put oats and water in a pot and bring to boil on the stove. Stir so it doesn't stick to the bottom of the pot. Once it boils, remove pot from the eye and cover. Let sit about 2 minutes. Stir in brown sugar, pumpkin and pumpkin pie spice (to taste).
This is 1 serving.
No Pumpkin Pie Spice in your pantry? That's okay... Just mix these together and make your own!!!
1/4 c Ground cinnamon
1 T Ground ginger
2 t Ground nutmeg
1 t Ground allspice
1 t Ground cloves
This makes about 1/2 cup so it'll last you for a bit.

Oh, this looks yummy! I actually was wondering how pumpkin would taste in oatmeal the other day. We will definitely try this! I always need new add-ins for our favorite breakfast staple!

Sadly, though, we have old-fashioned (haha!!) dial-up, so I can't listen unless I let it download for a REALLY REALLY long time. :( Mr. U is currently trying to work out something to see if we can get highspeed or DSL out here (we live in the middle of nowhere- cable doesn't even come out here!! LOL!!!). If that were to happen, I will JOYFULLY listen to Miss DeMoss everyday!!!

I just found your blog and printed out your Crock Pot Provincial Chicken recipe to try. It sounds so yummy. And, it makes me realize that for some reason, I haven't used my trusty crock pot in a few months.

I think the crock-pot is a FABULOUS invention!! LOL!! I used it just today to make, lo and behold, Provincial Chicken!! But, I did not have any zucchini (much to my dismay). I did have a large bag of frozen yellow squash, though, so I used it instead and it STILL came out great!!!
An easy recipe AND the crock-pot doesn't get much better. :)
