Cornbread blues...


Okay, here’s the deal. I have a really good recipe for cornbread. My husband LOVES this stuff. But EVERY TIME I make it, it sticks to the pan!! I am using a cast iron skillet and I heat it up in the oven first with some… uh hmmm… (I can’t believe I’m about to admit to this in public!!!)… Crisco in it. (There, I said it)… The Crisco is melted when I take the pan out of the oven and then I pour the cornbread mixture into the skillet and pop it back into the oven. What in the world am I doing wrong?

(I should tell you... this picture is only a PART of what stuck to the pan. The ENTIRE bottom of the cornbread was stuck.)

Oh, and here’s the recipe. LOVE it!!

Mrs. U.’s Cornbread
2 cups corn meal
2 tsp. baking powder
1 tsp. salt
1 T sugar (optional)
2 eggs
2 T oil
1 cup water
½ cup buttermilk

Mix wet and mix dry then mix the two together. Pour batter into a hot pan and bake 20-25 minutes or until golden brown. Makes one 9-inch pan.

Is you cast iron skillet well seasoned? You might try re-seasoning it a couple of times to see if that works. You can also try flouring the skillet after you've put the crisco in and see if that works.

Okay I'm an idiot. I was reading the ingrediets and wondering, what in the world is Toil, then I realize it was 2 T of oil. Okay so I'm not quite altogether today. *Ü*

I'm with Susan, I think it's your skillet. I don't use cast iron so I don't know about all that seasoning jive but it sounds good to me. *Ü*

I think it might be your skillet, too. Do you wash it after you use it? Or scrub it? It does sound like it needs to be re-seasoned. I don't wash mine out after I use it - I just wipe it out or sometimes I do wet it but I dry it immediately.

Oh!! Re-seasoning never crossed my mind!! Great thinking, ladies!!

I don't wash it. Well, I have put it under very hot water because I've had to scrape off the stuck on cornbread!! LOL!!! But, I haven't used soap on it.

I am definitely re-seasoning!!!

I have never heard of a cornbread recipe with no flour! Mine calls for 1 c flour and 1 c. cornmeal. I bet those are yummy and hearty! I've never had luck with iron skillets (I use an 8x8 glass pan. Pam spray works great on that thing). Hope the seasoning bit works for you!
