Chicken Pot Pie

My mom makes the BEST Chicken Pot Pie!! She doesn't make it a traditional way with pie crust on the top and on the bottom. She makes a simplified version that is my family's FAVORITE!!! There is a crust on top that is yummy and flavorful and the juice thickens up and has the perfect hint of spices in it.

Mom's Chicken Pot Pie
4 to 5 chicken breasts, cooked and diced
1/2 stick of butter
3 (14 oz) cans of mixed veggies
1 can cream of chicken soup
2 cups chicken broth
poultry seasoning, to taste
freshly ground pepper, to taste
garlic powder, to taste
1 1/2 cups self rising flour
1 1/2 cups milk

Melt butter in a 9x13 pan in your oven that is heated to 350 degrees. Once the butter is melted, remove pan from oven and add drained veggies. Season to taste with poultry seasoning, freshly ground pepper and garlic powder. Place chicken on top. Combine cream of chicken and chicken broth and pour this over the chicken in the 9x13. Season again. Mix flour and milk and pour on top (this will form the "crust"). Bake at 350 degrees for 1 hour.

Serve this with a big salad and, of course, I always welcome dessert with any meal. :)


NOTE: I did not have any cream of chicken soup when I made this the other day so I made a substitute. This is probably much healthier than buying the canned stuff anyway!!!


Cream of Chicken Soup Substitute
3 T Butter
3 T Flour
1/4 tsp salt
1 cup chicken stock, water or milk

Melt butter in heavy saucepan. Blend flour and salt into saucepan while cooking and stirring until bubbly. using a wire whisk to prevent lumps, stir in liquid ingredient choice slowly. Medium thick sauce is comparable to undiluted condensed soups and makes approximately the same amount as a 10 oz can.

Hi! I just came across your blog and loved re-reading the When Queens Ride By, that I'd read some time ago. I have a question regarding adoption. We adopted through our state's Dept. of Children and Families and have an open adoption. Do you know what age I should tell our daughter that this woman we visit with 2ce a year is her biological mom? Our daughter is now 5. We've always said "You're adopted", casually, so she hears the word, but haven't explained more yet. Thanks in advance, Gina

The recipe looks great. Thank you so much for including a substitute for the canned chicken soup. I am turned off by recipes that call for cans of soup of the sodium but I think I will give this recipe a try.

We are moving to North Carolina from Massachusetts next weekend so I am gong to be referring to your site for Southern recipes as I want to adapt to the Southern life and culture.

Sounds good! I have a pot pie recipe too. Well, to be honest, I don't go by a recipe, I just whip it up. lol I don't have a bottom crust, but the top is my biscuit dough (a little thinner than dough) seasoned with salt and pepper, garlic, and butter. I also use the Veg-all chunks and cream of chicken soup. You have me hungry for pot pie now. LOL

What a great recipe. Chicken-anything is one of my favorite foods!! When my son was still living at home, casseroles were our mainstay. Much more economical and always tastes better the next day. (PS - The deleted comment was mine. Don't know how I did that!)

Hi Gina! I wish I had a great answer for you about your daughter. My suggestion would be to talk with your adoption agency to find out about some books that you could read to your daughter explaining things from the open adoption perspective. Since she's 5, she probably does need to know that this lady is more than just a regular acquaintance. Perhaps you could share that she is the "birth lady" and that she carried your daughter in her tummy before she was born. Just a suggestion. I will pray that the Lord gives you and your husband clarity in this.

I tried your recipe for the chicken pot pie yesterday. I am sad to say it is all gone already. :) We loved it very much and usually I avoid making such recipes (like regular pot pie with pie crust) because they are more labor-intensive but this was not and I'll be making it quite often I am sure! Thank you very much!

Thanks for posting this recipe for the cream of chicken soup substitute...I was wondering if that would work. We have quit eating anything with MSG and soup is loaded with it. I have two recipes that my family loves with cream of chicken and I have been wondering what to do!
