Sausage Cheese Muffins...


When Mr. U and I were first married, our town had a quaint coffee shop called Calico Coffee. At first, we visited every once in a while. Then it turned to weekly visits and before we knew it, we were there at least twice a week!!

We went in for breakfast. The owner had WONDERFUL coffee (and offered endless cups, too, if you ate in her shop!!) and big, Texas sized muffins. Yum!! I can still smell the fresh coffee brewing, the warm muffins coming out of the oven and hear Andrea Bocelli playing over her sound system.

Unfortunately, the coffee shop closed a few years ago. But the owner was kind enough to share a few of her recipes with me!! Mr. U's favorite, by far, and her best-seller-muffin was the Sausage Cheese Muffin. Y'all, it is SOO delicious!! Maybe you should surprise your family one morning with this scrumptious offering.

Sausage Cheese Muffins

3 cups Bisquick *
1/2 cup finely chopped onion
1 cup grated cheddar (feel FREE to use MORE cheese!!!)
1 pound sausage (we use hot)
1 1/3 cup milk

Brown sausage and onion until brown. Drain. Stir together Bisquick and cheese and then sausage/onion mixture. Stir in milk and mix well. Pour into prepared muffin tins (we use Texas size muffin tins). Bake at 350 degrees for about 25 minutes or until they are golden brown on top.

* I will almost always use 3 cups of self-rising flour and then cup in about 1/4 cup of Crisco instead of using Bisquick.

Note: ALWAYS watch your oven! Oven temperatures vary so your oven may cook slower OR quicker!!!

I have those Martha Stewart towels, and my daughter so enjoys changing them out---she gets annoyed if I have the wrong day up..LOL.

Mrs. U. - you are just sooo far ahead of the game - posting for December already? My goodness, I'm having trouble keeping up with how time flies!

I am sending my dear Historian on a sausage run soon - to a place about 1 1/2 hours away which make the best drug free, additive free homemade lean sausage we can find - mmmmm! We'll have to give your recipe a try when we get our freezer re-stocked with sausage!

Do you cook the sausage first and drain it or does it go in raw ( I'm really hoping not raw)?

These are not a low fat muffin are they .... hmmm ... might not be good for my liver! My family would love them though! Maybe I could chance a nibble!

Also what do you serve these with? Fresh fruit cup would be nice I think, but what are your picks?

Hello Mrs.U. I just stopped by, from Old Fashioned Thoughtsblog. Where we both commented on her lovely entry on letter writing. Where you said; "I fully agree with you! Sadly, though, I get all excited about writing letters but then I have to MAKE myself sit down and do it."

Me too! -sighhhh- I love the idea of letter writing and have done it. Now I seem to have an awful time of getting back in the swing. -sighhhh-

So I commented over there, that maybe you and I should join in a *quest* to revive our letter writing. To each other. Sort of prime the pump that way. :-))))

I even have books of old fashioned stickers just languishing away. Waiting to be used on paper and envelopes. And colored pens {wish they were real pens with ink but... no}. I even used to put sealing wax on my letters but fear doing that now. I think it would gum up the new machines that all P.O. use today. Eeeek!!! :-)
