Tammy shared yesterday that she made a homemade Green Enchilada Sauce and WOW does it look YUMMY!!! I've made several enchilada recipes, but I'd REALLY love to know YOUR favorite enchilada recipe that uses green enchilada sauce! I'm just dying to try this new recipe.
Would y'all share?? Pretty please???

This is the recipe I use for my enchiladas: Green Chicken Enchiladas. Also, if you look at the recipe link, there are about four other ideas for using the green sauce. I thought I'd like to try the burritos next. :-)

I don't use green enchilada sauce in my chicken enchiladas but I do have a really yummy chicken recipe that I use it in. For lack of a better name I call it Green Chicken. I was low on food and made what was on hand that day and it turned out to be a keeper. You can just substitute the homemade sauce for the canned sauce.
Green Chicken
6 boneless, skinless chicken pieces
1 (10 oz.) can green enchilada sauce
1 (4 oz.) can diced green chilies
Place chicken in a crockpot. Add diced chilies and then pour enchilada sauce over all. Cookn on low for about 4-6 hours or until chicken is cooked through.

I have made this several times and it is great. The kids even liked it(tweens, and teens). I thought that it would be spicy, but it was not at all. Hope this helps.
